Black Bean, Avocado, and Mango Salad with Cilantro and Lime

 

I am really sick of winter. It has been cold and dreary for too long. I know it is only January and I live in Utah, so I have a few months to go:(  To help lift my spirits, I made this Black Bean, Avocado, and Mango Salad with Cilantro and Lime.

This salad reminds me of summer. I love all of the bright colors and fresh ingredients. I also like how easy it is to make. I used canned black beans, chopped up a tomato and cilantro, diced a mango, avocado, red onion, and sliced a lime. I put all of the toppings on a bed of romaine lettuce. The salad really doesn’t need a dressing-the juicy mango, creamy avocado chunks, and cilantro add plenty of flavor. I just squeezed fresh lime juice over the top for my dressing. If you are a dressing lover and need a little something extra, try Josh’s mango salsa. The salsa goes great with this salad and makes a very healthy dressing.

If you are experiencing the winter blues lime me, try this salad. It will take you to a special summer paradise-at least for one meal.

Black Bean, Avocado, and Mango Salad with Cilantro and Lime

Ingredients:

Romaine lettuce, chopped
1 can black beans-low sodium, rinsed and drained
1 tomato, chopped
1 avocado, diced
1 mango, diced
1/2 red onion, diced
1/2 cup fresh cilantro, chopped
2 limes-squeeze fresh juice over salad

Directions:

Place the romaine lettuce on a plate. Top the lettuce with black beans, tomato, avocado, mango, red onion, and cilantro. Squeeze fresh lime juice over the lettuce and toppings. Enjoy! It is that easy! If you want to warm up the black beans, you can. I like them hot or cold. If the lime juice isn't enough dressing for you, you can add salsa for a healthy dressing.

    I know what you mean about our horrible weather this year. We are buried here but I knew it was coming when I had to turn the heater on in our barn utility room in September! Way too early to turn on the heater!

    We are buried in snow and I longing for Spring!

    I made this for dinner tonight, substituting the lettuce with fresh baby spinach. I topped with grilled chicken I had marinated in mango chipotle marinade. Hubby said it was delicious!!! This is a definite keeper!
