Remember my Smashed Chickpea & Avocado Salad Sandwich? If you’ve tried it, you know what I am talking about. It is pretty much the best sandwich ever. I eat it all of the time. If you haven’t tried it, you are missing out. Add it to your must make list right now.

The other day, I was going to make my favorite sandwich for lunch, but I was in a rush, so I decided to throw together a quick salad using the same ingredients. My favorite sandwich turned into my new favorite salad. This Chickpea, Avocado, and Feta Salad is good stuff.

Ingredients

  • Chickpeas– rinsed and drained
  • Avocados– use ripe avocados!
  • Cilantro– if you don’t care for cilantro, you can use basil or parsley.
  • Green onion– red onion would also work!
  • Feta cheese– it adds a creamy and salty kick to the salad.
  • Lime juice– squeeze fresh lime juice over the salad for flavor and to prevent the avocado from browning. Lemon juice would also be good!

How to Make Chickpea Avocado Salad

You could probably make this salad with your eyes closed. Please don’t try it though since you have to use a knife to chop up the avocado. Probably the easiest and tastiest salad I’ve ever made.

  • In a medium bowl, combine chickpeas, avocado, cilantro, green onion, feta cheese, and lime juice. Stir until mixed well. Season with salt and pepper. Serve.
  • If you need the salad to be vegan, you can leave out the feta cheese, it will still be tasty!

This chickpea salad is perfect for a quick lunch, dinner, or healthy snack! And it’s a good recipe to serve at parties because it is so easy…and everyone will want the recipe!

A few ways to serve this salad:

  • Add to a bed of your favorite greens.
  • Stuff it inside of a pita!
  • Serve with crusty bread!
  • Make it a dip! My boys love eating it with pita chips!
  • Or eat it straight from the bowl!

Ingredients
  

  • 15 ounces chickpeas, rinsed and drained
  • 2 avocados, pitted, and chopped
  • 1/3 cup chopped cilantro
  • 2 tablespoons green onion
  • 1/3 cup feta cheese
  • Juice of 1 lime
  • Salt and black pepper, to taste

Instructions
 

  • In a medium bowl, combine chickpeas, avocado, cilantro, green onion, feta cheese, and lime juice. Stir until mixed well. Season with salt and pepper. Serve.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days.

  15. I’m going to try this soon, it sounds yummy! I’m also thinking this would make a wonderful hummus with the addition of a little garlic, and some tahini, blenderized to a chunky consistency. Leave the cheese out and sprinkle it on top instead. Serve with pita chips or corn chips.

  20. I made this for my VERY picky vegetarian boyfriend and he asked if he could finish the whole (giant) bowl, so I guess that means he loves it! I did make a few minor substitutions – used onion powder instead of fresh onions and no cilantro (because it was not good at the grocery store) and added tomatoes. It was still awesome, but next time I will definitely use the cilantro!

  23. Holy yummy. Made this tonight with a small change to the original recipe. I didn’t put chick peas in it (as my family is not too fond of them) , but put tons of diced veggies like diced cherry tomatoes, yellow and orange pepper and tons of cucumber. And I grilled the avocado with garlic, and added when cooled. It was friggin amazing!!!

  41. I have been eating this literally every day since I first read about it…. However, I use goat cheese and it is sooo much better! And when I dont have limes I sprinkle lemon pepper on it. It’s DELISH and filling!

  46. About how long could I make this last in my fridge in tupperware? I often batch prepare my lunches for a couple days. With a little extra lime juice, I’m hoping to have this for 2-3 days, even if the avocado gets a little browner (still good).

    1. If you are fine with it browning a bit, it will last for a couple of days in the fridge.

  47. Fixed this over Memorial weekend and it was a complete hit with the entire family. Very light and refreshing. I made it maybe 6 hours ahead of time hoping the lime juice would keep the avocados from browning however they still did a bit. Nobody minded  tho because they loved the taste.

  52. I just made this salad and it was wonderful!!! I did tweak it a little bit though. I left out the cilantro as I am not a big fan and I used Jalapeno Pepper Feta cheese and that gave it a little well needed zip.

    1. It might brown a little. Squeeze extra citrus on the avocado and cover it tightly with plastic wrap. I eat the leftovers the next day and I think it is still good:)

  61. Hi, thanks for the recipe! I made this last night to have for lunch today, and when I tasted it last night it was delicious! However, today when I ate it for lunch, it had kind of a strange citrusy bitterness, almost like grapefruit peel… any idea what that could be? I followed the recipe exactly, with the exception of adding green onion (didn’t have any). The lime was fresh, bought it the same day… any ideas on the bitter flavor?   67. How do you keep the avocado fresh (and fresh looking) for a few days if making this ahead of when u want to eat it or should I just not care that it’s gone brown?

    1. Sam, If you’re still reading the comments, I learned to put my avocados in the fridge after they ripen and they keep for at least a week. Ina Garten taught me that. 🙂

I use avocado in my weekly salads and I only put avocado in the one I’m taking that night, so I cut a small portion off and wrap the remaining avocado with Saran Wrap tightly with pit remaining in. Just wrap really tight so no air gets in and only use for one day at a time. I just know when it turns brown it really tastes bad

    I made this tonight and it was awesome! This will be a regular. I have to add, tho, drain chickpea juice into a bowl and whip it like you do whipping cream. It will take about 15 minutes but you add sugar and vanilla and it tastes just like whipped cream – not chick peas! Delicious!

    Love the flavors, simplicity,and ease, however took off a star as I really miss something crunchy in there. The second day I added it to a Trader Joe’s bag of chopped Southwestern salad and the cabbage, pepita’s, and tortilla strips added the missing crunch very nicely. If I made it again I would experiment with celery, bell peppers, or something else to give it crunch.

    1. I always eat the leftovers the next day. The avocado may brown a little but the lime juice helps!

    This recipe is great and super easy! I didn’t have two avocados so I used one and added a half of a cucumber diced up… Would highly recommend!

    works out well …

    if i dont have the green onion i put finely chopped vidalia or maya sweet

    I loved this recipe! I saw it on pinterest a couple days ago and thought it looked interesting. Today when dinnertime rolled around it was 106 degrees outside. I didn’t want to cook anything so I looked it up. I’m so glad I did. I didn’t have cilantro so I used dill. That inspired me to add cucumber for crunch. I served it over baby greens and it was wonderful.
