Cucumber Mango Salsa Recipe

I am feeling HOT, HOT, HOT…and that is because it is 100+ degrees outside. We’ve been spending as much time as possible in our cool basement, but our boys still beg to go outside. They don’t seem to mind the heat. They still want to play at the park, go on walks, and hit the pool. I can only take them bouncing off the basement walls for so long, so eventually I give in and we go outside.

Before we head out into the heat, I make sure we load up on sunscreen, water, and cool snacks. I made Cucumber Mango Salsa to take to the park and it was the perfect snack for a sweltering summer day. The boys played while I sat in the shade and ate most of the salsa:) Oops!

Cucumber Mango Salsa Recipe

You only need six ingredients to make this healthy salsa: cucumber, mango, cilantro, fresh lime juice, red onion, and jalapeño. I love that it has veggies and fruit involved. It makes me feel better about how many chips I eat:)

This refreshing salsa can also be used as a topping for grilled fish or chicken. It is the perfect salsa for summertime!

Make a bowl of Cucumber Mango Salsa, grab the chips, and hide in the shade…or cool basement. I won’t judge you if you eat an entire bowl of salsa while watching Netflix in the AC. I would never do this…oh, wait, I think I will skip the park next time and stick to the basement:)

Cucumber Mango Salsa

This simple, fresh, and healthy salsa is great with tortilla chips or served over grilled chicken or fish.

Ingredients
  

  • 1 cup diced seedless cucumber
  • 1 cup diced mango
  • 1/4 cup diced red onion
  • 1 small jalapeño seeds removed and diced
  • 1/4 cup chopped cilantro
  • Juice of 1 lime
  • Salt and black pepper to taste
  • Tortilla chips for serving, optional

Instructions
 

  • 1. Combine cucumber, mango, red onion, jalapeno, cilantro, and lime juice in a medium bowl. Season with salt and black pepper, to taste. Stir and serve with tortilla chips, if desired. This salsa is also great with grilled fish or chicken.

  2. Yes to all these ingredients. We’re big into cucumber salads here, but often go the vinegar route. I love the pairing with mango, cilantro and the spice from the jalapeno.
