Easy Spinach Salad
Last week I went out of town for a few days to attend an event with Thermador. I had an amazing time and will write a post about my trip soon. While I was gone, Josh made this easy spinach salad for dinner. I am pretty sure he ordered pizza to go with his salad, but at least he got his veggies in:)
Josh used what we had in our refrigerator to create his side salad. He added tomatoes, cucumber, red onion, red peppers, and Atheno’s black peppercorn feta cheese. He drizzled balsamic vinegar and olive oil over his green salad and that was it. This salad is easy and goes well with any meal-even take out pizza:)
While I was on my Thermador trip, Josh started our kitchen remodel. Yes, you heard me right, Two Peas and Their Pod is getting a new kitchen! I am very excited, but a little nervous. Our house is a construction zone and will be for a couple of months. I am trying to keep the end goal in mind so I can survive the kitchen remodel. Luckily, we are remodeling in the summer so we can grill out and eat simple salads. Our neighborhood has also started a sign up sheet to have the “cooking couple” over for dinner. We will do the cooking, we just need to use everyone else’s kitchens, works out nicely for us and them:) I will be posting updates along the way, so stay tuned!
Tomorrow is the last day to vote for Two Peas and Their Pod in the BlogLuxe Awards. We are nominated in the Tastiest Blog category. You can vote today and tomorrow. Go vote now! We are honored to be nominated and appreciate your support.

Salads are so easy and filling for the summer! I’ll have to look for the Black Peppercorn Feta
Try to have fun with the remodel. Just keep repeating “It WILL be worth it!”
Looks so good I could eat it for breakfast right now!
That is like one of my favorite go to kind of salads! Glad you had a great trip. Happy Sunday
Refreshingly healthy!
cheers,
Rosa
the salad looks so refreshing. i grew-up eating feta cheese, so any recipe with feta cheese has won my heart over.
How exciting you’re remodeling your kitchen – I’m already looking forward to before and after pics! And I’m impressed your hubby made such a refreshing salad – mine doesn’t eat them unless I make them!
Go Josh Go!! Feta cheese is one of my most favorite ingredients ever. Congrats on your kitchen re-model….xo
Gorgeous! I love salads like this! I’ve not seen black peppercorn feta, it sounds wonderful!
I really love simple salad ideas like this. it’s so easy to forget how nice some fresh veggies and feta can be.
Yay for your coming-soon new kitchen! And yay for grills. We gave our only grill away in Kansas and I’m missing it bad!
Kitchen remodel is FUN. took about 2 months for ours. Used convection oven, electric skillet, microwave. AND the grill, too. Have fun!!
Oh, and salad looks good, easy.
What a beautiful and simple salad! I will surely make this one soon!
I think it’s so great that your neighbors are inviting you to cook in their kitchens while yours is being remodeled… and I can’t wait to see what your brand new kitchen looks like! I hope you’ll share.
What a fun idea–I wish you lived in my neighborhood and could come cook with me
