When I go out to eat at a Mexican restaurant I almost always order the veggie fajitas. I love them, but I don’t like how they make a scene. When they bring the fajitas out everyone in the restaurant stares because they want to see who ordered the sizzling fajitas. I am not one who likes any extra attention. I also hate how the fajitas take up the entire table. The hot skillet plate takes up a ton of room and then you have all of the toppings and tortillas. There is no room for anyone else or anything else at the table…and I especially don’t like it when the waiter or waitress tries to take away my chips and salsa to make room. Not a smart move. I need my chips and salsa!

I decided to solve the fajita problem by making Fajita Quinoa Bowls at home. That’s right, everything is in ONE bowl. There is no need for a big show or table. All of the goods are in one bowl!

Fajita Quinoa Bowls are easy to make and fun to eat. There are a lot of fun colors and flavors going on.

For the veggie fajita bowls, I use yellow, green, and red bell peppers. I also toss in some red onion and mushrooms. I spice things up with Old El Paso’s Fajita Seasoning and let the veggies sizzle. A bonus to making fajitas at home? The only person who was staring at me was Maxwell and I am ok with that. Those big baby blues are welcome to stare at me anytime:)

I think Maxwell wanted a taste though. I don’t blame him. Look at those beautiful, vibrant fajitas!

To create my Fajita Quinoa Bowls, I made Cilantro Lime Quinoa. It’s my fave! I put the veggies, quinoa, black beans, avocado, lettuce, tomatoes, and a squeeze of fresh lime juice in one big bowl. So fresh and tasty…and all for me! I love that I didn’t have to share my bowl…even though Maxwell was begging for a bite. Someday I will let him have a taste:)

These Fajita Quinoa Bowls are super customizable too! Feel free to add your favorite toppings! They are perfect for a quick and easy meal or would be fun to serve at a party!

Fajita Quinoa Bowls

If you like fajitas, you will love my Fajita Quinoa Bowls. They are perfect for a quick and easy dinner or for entertaining!

Ingredients
  

  • 1 tablespoon olive oil
  • 1 red or yellow onion cut into thin rounds
  • 1 red bell pepper seeds removed and thinly sliced
  • 1 green bell pepper seeds removed and thinly sliced
  • 1 yellow bell pepper seeds removed and thinly sliced
  • 8 oz mushrooms wiped clean and thinly sliced
  • 1/2 cup water
  • 1 packet of Fajita Seasoning
  • Juice of ½ lime
  • 1/4 cup chopped fresh cilantro
  • 1 15 oz can black beans, drained, rinsed, and heated
  • Cilantro Lime Quinoa
  • 2 large tomatoes diced
  • Romaine lettuce washed and chopped
  • 2 avocados sliced
  • Fresh lime juice for squeezing over bowls

Instructions
 

  • Heat a large skillet or cast iron pan over medium-high heat. When the pan is hot, add the olive oil. Add the onions and peppers and cook until tender, about 5 minutes, stirring frequently. Add the mushrooms, water, and fajita seasoning. Stir until seasoning mixes in. Add the fresh lime juice, cilantro, and cook until the mushrooms are tender. Remove from heat and set aside.
  • To assemble the fajita bowls, fill bowls with fajita veggies, black beans, cilantro lime quinoa, tomatoes, lettuce, and avocado slices. Squeeze fresh lime juice over the bowls and serve.
  • Note-if you can't find fajita seasoning you can use taco seasoning. You can serve tortillas on the side, if desired. If you don't need the bowls to be vegan, feel free to add cheese, sour cream/Greek yogurt! You can also add chicken or steak to the mix! Go crazy and customize your bowls!
