I cut the peaches and mozzarella into thin slices and got out a jar of my favorite Spinach Basil Pesto. If you don’t want to make your own pesto, you can use store bought pesto.

Ingredients

  • 4 Flour Tortillas
  • 4 tablespoons basil pesto
  • 2 medium peaches pit removed and thinly sliced
  • 4 oz fresh mozzarella cheese thinly sliced

Instructions

  • 1. Preheat the grill to medium heat. Lightly spray one side of each tortilla with cooking spray. On unsprayed side of each of the tortillas, evenly spread the pesto. Add the peaches and mozzarella cheese. Top each with remaining tortilla, sprayed side up, and press together.
  • 2. Place quesadillas on directly on the hot grill. Cook for 6-8 minutes, carefully flipping once, until cheese is melted. Remove from grill and cut the quesadillas into quarters. Serve immediately.
  • Note-you can make these quesadillas in a skillet or on a griddle pan if you don't have a grill.

  1. I never would have thought of putting peaches in quesadillas, but I LOVE this idea!!! And peaches and pesto are a match made in heaven.

  2. Oooo I totally have peaches, pesto AND I even have a stash of plantain tortillas in the freezer I made last month. I can’t wait to try this. What a fun combo of flavors!

  3. Such a perfect summer lunch! The flavor combos are nothing short of perfection 🙂

  4. Yay for pesto! I love how you paired the peaches and mozzarella with the flavorful pesto – what a winning combination!

  5. Thanks for this recipe! I immediately had to try it out. Whilst it was delicious, I found them to be missing something and have come to the conclusion that pepper might be the answer. Obviously the spiciness of those peppers is a matter of taste, but even a nice black pepper or a paprika would do nicely. Roasted red peppers would be another great option. I have yet to try this out, but really look forward to doing so!

  6. I love these and make them every summer. I just took the kids peach picking today and this is definitely going to be dinner tonight!
