Guacamole Dip

Guacamole Dip

Welcome to 2009! I hope everyone is ready and excited for the new year!

Over the weekend we had a party to watch the University of Utah play in the Sugar Bowl. Josh graduated from the U and he is the biggest fan! It was a great game. The Utes beat Alabama! They had a perfect season, 13-0! YAHOO!!!

Football and food just go together, so of course we had a spread of tasty items. This week I will be sharing some of the recipes. First, we will start with my Guacamole Dip. Avocados were on sale, 3 for $1, so we knew we had to make it. It was a sign:)

This recipe is really so simple. All you do is chop, stir, taste, maybe tweak a few things,
and eat with chips! Easy breezy…and perfect for game day!

Guacamole Dip

6 ripe avocados, mashed
7-8 Roma tomatoes, diced
3 green onions, chopped
1 jalapeno pepper, diced
1 garlic clove, minced
1/2 bunch of fresh cilantro, chopped
Juice of 2 limes
Salt
Pepper

1. Mash avocados in a bowl. I squeeze them out and finish the job with a fork. Add in diced tomatoes, onions, jalapeno pepper, garlic, cilantro, lime juice. Stir until combined.
2. Salt and pepper to taste. Try it with a chip.
3. Tweak the recipe to your likings and enjoy! I told you it was basic!!

Hey there! I have missed coming here everyday, life’s just been a bit busier. This guac looks incredible. I am afraid I would eat the whole bowl so I will make it when I know I have bunches of people coming over. Perfect for Super Bowl.
