Lime & Coconut Ice Cream & KitchenAid Ice Cream Maker Attachment Giveaway

It is getting hot outside and that means it’s time to cool down with frozen desserts. Ice cream, frozen yogurt, sorbet, gelato-sign me up for them all! I love a good frozen treat. My blogging friend, Susan, just came out with a book-The Everything Ice Cream, Gelato, and Frozen Desserts Cookbook and I am so excited to try all of the recipes. Over the weekend I made the Lime and Coconut Ice Cream and it is fabulous! It is the perfect summer treat!

Well, this Lime and Coconut Ice Cream is perfection. It is smooth and creamy with the perfect amounts of coconut and lime.

Lime and Coconut Ice Cream

This Lime and Coconut Ice Cream is a great summer treat. Cool down with a scoop...or two!

Ingredients
  

  • 1 1/2 cups whole milk
  • 1 cup sweetened shredded coconut
  • 1/4 cup granulated sugar
  • Pinch of salt
  • 4 large egg yolks
  • 1 14 ounce can sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 1 Tablespoon finely chopped lime zest
  • 1 teaspoon coconut extract

Instructions
 

  • 1. In small sauce pot, combine the milk, coconut, sugar, and salt. Stir with a wooden spoon over medium heat. Continue simmering until it has reduced to by about a fourth. Cover and allow to steep for one hour. After one hour, strain the coconut milk into a measuring cup. Reheat milk mixture over medium-low heat.
  • 2. In a separate bowl, whisk egg yolks. Once milk mixture is hot, temper the yolks by adding half of the mixture into the eggs, whisking constantly. Return mixture to saucepan, and heat until thickened.
  • 3. Pour sweetened condensed milk, lime juice and zest into a large mixing bowl, over an ice bath. Strain custard into the cream, stirring until cooled. Add coconut extract, stir, and place in refrigerator until thoroughly chilled, about 5 hours or overnight.
  • 4. Once chilled, add to ice cream maker and follow manufacturer’s instructions.

  22. My favorite frozen dessert is, of course, homemade ice cream! Sounds boring, but vanilla is my all time favorite because you can add so many interesting toppings to it and make it extra special and delicious. Second would be brown butter ice cream.

My favorite frozen dessert is a layered one – a crust made of butter & crushed oreos, a layer of vanilla ice cream, a jar of hot fudge drizzled on top of the ice cream, and then peanuts and a few more crushed oreos on top. Freeze for about 2-4 hours and enjoy. This makes a fantastic breakfast too – I should know, been there, done that!

  71. Mom mom used to make homemade ice cream. I grew up on a farm, so plenty of cream and eggs. Dad would crank the ice cream maker while we sat and watched. It seemed to take forever, we couldn’t wait till it was finished. Vanilla, strawberry, fresh peach. It was so good.

  85. I make something called “ice cream dessert” oreo crumbs on the bottom, peppermint (or mint cho chip) ice cream, home made fudge sauce, cool whip. It makes a huge dessert andmy family eats on it for a long time when they come visit.

  301. growing up, I remember a frozen treat we called lemon ice. it is kind of like a granita, you freeze and scrape it in a 9×13 pan, but it had milk in it so it was creamier than just the shaved ice. now I am craving a sweet treat from the freezer!

  306. FYI: The recipe listed is different from the one in the book. I’m glad I bought the book. It calls for 1 1/2 cups of whole milk (not 1/2 cup) and instruction 1. also needs to include adding the sugar to the mixture. Just a heads up incase anyone is making it this weekend (like me!)

My favorite frozen treat to whip up would have to be my coffee almond fudge pie… I take softened coffee ice cream or gelato mix in a handful of sliced almonds, pack this into a chocolate cookie crumb crust, and drizzle the top with fudge sauce. Pop it into the freezer for an hour, and you have a yummy treat that everyone will love! By the way, I use my Kitchen Aid all the time, but could REALLY use the ice cream maker attachment. I am already daydreaming of all the wonderful goodies I could make with it! Thanks! 🙂

  308. My grandmother was Caribbean and used to make pineapple granitas for us. I still make them to this day! Make a simply syrup with equal parts sugar and water, in a food processor, loosely process a whole pineapple. Mix the whole thing together, add a splash of coconut milk, and freeze it. When it’s almost all frozen, scrape it into cups with a fork, and top with another splash of coconut milk. I put basil on them nowadays too – grandma wasn’t gourmet, but MAN her food was special and delish! 🙂

  345. I made this, and it seems like it’s missing more milk and/or cream. The recipe states it makes 2 quarts. Making it as is would have yielded a half quart or so. Plus the flavor was extremely strong. I added additional milk and cream to yield one quart, and the flavor is still pretty strong, although it tastes really good. I would recommend tasting it prior to freezing it, to see if you want to dilute the flavor a bit. With the recipe saying it yields two quarts, I wonder if an ingredient is missing from the recipe.

    I agree with Sheila about it seeming like something is missing, and that the flavor is strong. Whilst the resulting ice cream was still pretty yummy, I could really only taste the lime, and I wound up with much less than 2 quarts. I feel like I needed to add some coconut milk or something.

  347. My favorite ice-cream is tricky. Due to my food allergy I am dairy free. I love making new creations that i know I can trust and understand all the ingredients going in. My favorite is a mock maple almond sorbet! if i could have ice-cream, it would be cookies and creme=]

  348. Since I was a little girl I’ve always had a sweet tooth. Now that I’m older I’ve begun trying to make healthier choices for myself, my daughters and my granddaughter. With that being said, I believe my favorites I find most difficult to steer clear of are tiramisu and Blue Bell’s Moolenium Crunch ice cream! It’s sad, but I’m proud to say I’ve gotten more than a few family members and friends addicted to both! Tiramisu is so simple, elegant and rich all at once. Moolenium Crunch is almonds, walnuts, pecans and pieces of dark and milk chocolate as well as caramel chips distributed perfectly in their famous vanilla ice cream. They also make a chocolate ice cream version, but I choose the vanilla every time! If you haven’t tried them YOU MUST!

  349. I really want to like this recipe, I didn’t. I followed the recipe to the letter. Chilled mixture over night, my ice maker  cylinder is always in the deep freezer. I am assuming the there is just to much sugar in the recipe. It couldn’t freeze. I followed my ice cream maker instructions. It said to process 20-25 minutes. But it wasn’t ready so I processed another 25 minutes. Nope still not ready to put in a container. I felt the mixture was almost  gelatinous. The flavour was delicious but way too sweet. Won’t be making tgis one again. Although I did like steeping my own coconut milk instead of buying canned. At the moment the ice cream is in my deep freezer, I hope this improves the texture.
