Mexican Rice Bowl
We have been eating a lot of Mexican food lately. Pregnancy has thrown off my tastes and food desires, but Mexican food has been a staple. It always sounds good to me. Josh has been making me a lot of quesadillas, burritos, and enchiladas. When he made Cilantro Lime Rice to take to a party, I asked if he could make a large batch for us to have at home. I used the cilantro lime rice to create a Mexican Rice Bowl.
Josh always cooks dinner, but unfortunately he is not home during lunch time, so I am on my own. I usually don’t feel like cooking, so my meals have been interesting. When I saw the cilantro lime rice in the refrigerator I decided to make a Mexican Rice Bowl. I added black beans, tomatoes, red onion, cilantro, and avocado to the rice. I squeezed fresh lime juice over the entire dish for an extra kick of citrus.
This was the best lunch I have had in a long time. It really hit the spot, plus it was beyond easy to make. My kind of meal! I know this will be a regular meal at our house. Mexican Rice Bowls are fun and easy to make. Feel free to add cheese, chicken, fish, or any other toppings you like. And yes, I realize I served my Mexican Rice Bowl on a plate, but I usually eat it in a bowl. I just wanted you to see the entire dish:)
Mexican Rice Bowl
Ingredients:
Cilantro Lime Rice
Black beans
Diced tomatoes
Diced red onion
Chopped cilantro
Avocado slices
Fresh lime juiceDirections:
1. Add cilantro lime rice to a bowl or plate. Top with black beans, tomatoes, onion, cilantro, and avocado slices. Squeeze fresh lime juice over the entire dish. Serve warm.
Note-I didn't include ingredient measurements because I never measure. This recipe is that easy! I like to make individual bowls so everyone can have add their favorite toppings. Enjoy!

I made this for dinner last night. Wow! Thank you so much for this recipe! My husband was only about two bites into his dinner when he asked if we could have this again soon, ‘like tomorrow!” LOL
I added some spices to the beans as they heated on the stove, and there was a spoonful or two of salsa over the top. This rice and this idea will become one of our go-to recipes for something fast and delicious.

Kudos to you for cooking while you’re pregnant. My first four months I got by on Caffeine Free Coke and Brown Sugar Poptarts I bought at the Twilight Zone in the BYU Bookstore. Anytime I tried to cook I felt like I was going to turn inside out. Ugh. Just the memories!!

Cooking hasn’t been easy. Josh has been doing most of the work. I am spoiled:)
This was a signature dish in our home when I was growing up. We always had beans and rice… and on nights mom was too tired to cook, we would make different variations of this dish.
Cooked and diced squash or zucchini would be good mixed in as well!

I lived in Baja Mexico for a few months a while back and I think I ate this for lunch pretty much every day!

Yum! This is one of my all time favorite meals. Isn’t the little addition of cilantro and lime to the rice just perfect??
This looks soooo good! And I love the fact that you don’t measure. The only time I measure is when I’m posting a recipe; otherwise, it’s a pinch of this and a little bit of that. I’m just not into the exact measurement thing, I guess. : )

I know I’m a little late here, but I just had to say THANK YOU for this recipe! We tried it tonight for the first time and the first words out of my husbands mouth were “This is right up there as maybe one of my favorite meals ever.” followed a few minutes later with “I have GOT to get more of this”.
