Peanut Butter Granola Balls
I am in Park City, Utah at the EVO Conference. The conference is at the Canyons resort and it is gorgeous! We live in Utah, but sometimes I forget how lucky we are to be surrounded by such beauty. Yesterday, I went hiking with Aggie and Lisa and we had so much fun. Today the conference agenda is packed full. I am excited to learn! It should be a fun filled weekend.
I recently made these Peanut Butter Granola Balls and they are one of my new favorite snacks. They are easy to make and only take a few ingredients-which you probably already have in your pantry.
To make the Peanut Butter Granola Balls you will need: oats, crisp rice cereal, honey, peanut butter, butter, dried cranberries, and chocolate chips.
First, you melt the butter, peanut butter, and honey together in a medium saucepan.
Next, stir in the oats, crisp rice cereal, and dried cranberries. Let cool for about 2 minutes and then stir in the chocolate chips. Form the granola into little granola balls. I placed them in little paper cups, but if you don’t have the cups you can just place them on wax paper. Chill the granola balls for about 15 minutes and enjoy!
These Peanut Butter Granola Balls make a great snack or sweet little treat. I have a sweet tooth and the chocolate chips and dried cranberries are the perfect answer for my sweet cravings. I also love that these are so easy to make. Get the kids to help you with this recipe. Peanut Butter Granola Balls are fun for both kids and adults!

Glad you like the peanut butter granola bars. One of my favorite snacks to:)
Hi, I’ve had these on my list to make for a while. I am wondering, though… do you think it would work to ‘press’ this mixture into a pan to make more of a granola bar? They’re cute in the little candy liners, but I’m wanting to make them a little more transportable for lunches, etc.. (and I don’t normally have candy liners).
So.. if you were going to put these in a pan, would you do an 8×8, 9×13… do you think this would even work? Thanks for your help!!

I haven’t tried them in a pan, but I am sure they would work. Try an 8 by 8 pan.

We have a peanut allergy issue to deal with here. Do you think Roasted Almond Butter will be a good straight substitute or should I add/subtract some other ingredients?
Two Peas replied: — December 30th, 2011 @ 12:49 pm
Yes, you can use almond butter instead of peanut butter. Enjoy!

I would live to try these but I’m on weight watchers and I don’t see the nutrition info. Could you send it to me?
Two Peas replied: — January 18th, 2012 @ 11:02 pm
I don’t have the nutrition information, sorry!
I just made these but they didn’t stick together. I was a little short on honey, do you think that is why?
Two Peas replied: — January 18th, 2012 @ 11:01 pm
Possibly, they always stick together for me. Sorry you had issues!

Any ideas on what can be used instead of honey? Or do you think omitting the honey they’ll still be fine?
Two Peas replied: — May 8th, 2012 @ 5:15 pm
The honey holds the balls together. I haven’t tried using any other sweetener or leaving it out.

want to make these for a baby shower and wondered if you’ve made them ahead of time and stored them? How do they keep? and if so, what’s the best way to keep them fresh and tasty?
Two Peas replied: — August 12th, 2012 @ 11:04 pm
You can make them ahead, just keep them in the refrigerator until you are ready to serve.
I made these this week and they.are.awesome. I omitted the margarine as I am counting calories and these are SO good! My 6, 4, and 16 month old daughters loved them as well. Thanks for the great recipe, these will be made often!
Even though my chocolate chips melted while I was scooping the mix into the little cupcake liners, they are absolutely delicious! Perfect texture.
