Roasted Sweet Potato, Apple, and Spinach Salad

This week has been a long one! I was out of town for work and traveling wears me out. Plus, I missed Josh, my bed, and kitchen. I am happy to be home! My dad is visiting from Illinois this weekend. I am excited for some fun family time!

My brain is still pretty fried from the trip, so I don’t have a lot to say today, but try this salad-you will love it! The roasted sweet potatoes really make this salad. I like the sweetness and crunch of the apple slices too. I add a little red onion and feta cheese for extra flavor. I use fresh spinach, but a spring mix would be good too! Dress the salad with a balsamic dressing of your choice! Enjoy!

Roasted Sweet Potato, Apple, and Spinach Salad

Ingredients
  

  • Olive oil
  • 1 large sweet potato peeled and chopped into cubes
  • Fresh spinach
  • 1 Granny Smith apple thinly sliced
  • Red onion slices
  • Feta Cheese
  • Balsamic Dressing

Instructions
 

  • 1. On a large baking sheet toss the sweet potato cubes with a little olive oil and salt and pepper. Roast the sweet potato cubes in a 400 F oven. Make sure you turn the sweet potatoes a couple of times while they are roasting. Roast until soft, about 30-40 minutes. Remove from oven and set aside. Prepare salad.
  • 2. Place the fresh spinach on a plate. Add the roasted sweet potatoes, apple slices, red onion slices, and feta cheese. Drizzle with balsamic dressing. Enjoy!

  2. I do something like this too! I actually use butternut squash, and roast the onions along with it too. I pile the warm veggies right on the spinach so it wilts ever so slightly. Love it!

  11. This salad sounds delicious. I definitively have to try to cook sweet potatoes more often. I would only add some pinenuts or hazelnuts for additional crunchiness!
