Vegetable Lime Chickpea Chili {Picky Palate Cookbook Giveaway}
Last week packed up our mini-van and drove to Illinois to visit my family. Josh helped my dad with a home renovation project while I spent most of my time in the kitchen. I was much more useful in the kitchen. I don’t do so well with sheetrock, sanding, and painting. I don’t think the guys minded because every time they came into the kitchen they had something yummy to sample.
One night, we had family and friends over for a soup and chili party. I made Vegetable Lime Chickpea Chili from our good friend Jenny’s new cookbook, The Picky Palate Cookbook. When I saw this chili recipe in Jenny’s book, I immediately bookmarked it. I love a chili that is packed with vegetables. Plus, this recipe has chickpeas, cilantro, and lime-all of my favorites.
This chili can be made in about 30 minutes, which makes it perfect for a weeknight meal. All of the ingredients get tossed into one large pot so there isn’t a lot of clean-up. I also love this recipe because it is vegan, gluten-free, and vegetarian-which makes it perfect for serving a crowd. And if you are a meat lover, I promise you won’t miss the meat. This chili is full of flavor and very satisfying. And the kiddos will love all of the colorful vegetables. Caleb devoured his bowl of chili.
Everyone at the party loved the Vegetable Lime Chickpea Chili. It was actually the first thing to go! We are going to make this chili all winter long. It’s already a family favorite. Thanks Jenny for the fabulous recipe!

Vegetable Lime Chickpea Chili
Yield: 6-8 servings
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
An easy, healthy, and flavorful chili the entire family will love!
Ingredients:
2 tablespoons extra-virgin olive oil
1 1/2 cups finely chopped white onion
1 1/2 cups chopped zucchini
1 1/2 cups yellow squash
1 cup chopped mini sweet peppers
1 8-ounce package baby bella mushrooms, sliced
2 tablespoons minced garlic
2 15-ounce cans chickpeas, drained and rinsed
1 28-ounce can diced tomatoes
2 cups vegetable broth
1/2 cup chopped fresh cilantro leaves
3 tablespoons lime juice
2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepperDirections:
1. Heat the olive oil in a Dutch oven or large pot over medium heat. Add the onion, zucchini, yellow squash, sweet peppers, and baby bells and cook, stirring, until tender, 5-8 minutes. Add the garlic and cook, stirring, for 1 minute. Add the chickpeas, tomatoes, broth, cilantro, lime juice, cumin, chili powder, salt, and pepper, stir to combine and cook until hot, about 5 minutes. Reduce the heat to low and simmer until ready to serve.

My favorite weeknight meal is faro with seasonal vegetables, cooked or not depending on what the vegetable is, so right now it’s a lot of root vegetables with some tomatoes and spicy peppers. I put a light balsamic dressing on it.
Most pasta dishes are pretty easy and delicious for quick filling weeknight meals, and I usually have what I need on hand.
My favorite Week Night Meal is Chili! I eat chili almost every day or night as I am on a high protien diet and Chili is my favorite… so I will be trying this recipe too! xo

i would say spaghetti and leftover pizza is my favorite weeknight meal!

Our favorite weeknight meal is tacos. Versatile enough to satisfy everyone quickly and easily. Also so many variations that we never tire of them.

I love pizza. I could eat it every night of the week and now that I have finally found a great pizza crust recipe, I pretty much do.
I recently got really into veggie rice bowls with nutritional yeast and balsamic. So easy and satisfying!
Steamed veggies on rice topped with shredded cheese, sliced green onions, and sunflower seeds fills the bill when time is scarce mid-week.

Some form of tacos or burritos is a warm-weather week-night staple; chili or mini-meatloaves are a cold-weather stand-by!

We love to eat quinoa with feta and whatever veggies I have in the house. Quick, easy, healthy and loved by all 6 of us, ages 33 years to 10 months.

One of our favorite weeknight meals is actually Jenny’s Shredded BBQ Chicken Ranch Spaghetti. It’s one of the first of many recipes that I tried of hers and became an instant family favorite. It’s super easy to make and packed full of flavor. Our two year old gobbles it up.
I love making homemade chili!
Pasta and cheese. Easily adaptable for the non-vegetarian who likes to add pepperoni or chicken, and for the vegetarian (me) I add some vegetables like broccoli or spinach.
Favorite weekday meal includes fish or shellfish – especially when its freshly caught. Lots of salmon and crab here in the NW!
Our favorite weeknight meal starts with a big salad then pasta with meat sauce or meatballs (depending on my mood and ambition) and garlic bread.
Right now Tortilla soup is a warm satisfying favorite.

I try to stick to easy stuff – tilapia, turkey burgers, chicken sausage. I also do simple sides like baked potatoes and steamed veggies in the bag.
My favorite right now is chicken and wild rice soup.
Italian sausage soup with crusty french bread.
hmmm…mca n cheese with butternut squash bc then there’s plenty of easy to reheat leftovers!
If I’m going for quick and easy, pasta, veggies pulled from the freezer, and a veggie burger. If I have a little bit more time, then pasta, pan seared fish (salmon, tilapia), and veggies – and if I have any left (I make a batch and freeze in ice cube trays at the end of the summer), I’ll add some pesto to the dish. Otherwise, it’s usually a red sauce on the pasta and a little s&p or a pre-made spice blend on the fish.
In the winter, I love a hearty soup or stew…….chicken and dumplings. Yum!
In the winter our favorite weeknight meal is definitely a baked potato bar with lots of toppings. Sometimes the toppings include chili, broccoli cheese soup, a homemade sauce with cream cheese and ham or maybe just cheese sauce but always with sour cream or ranch dressing, grated cheese and bacon bits or chunked ham. Everyone can have their favorite meal.
My new favorite weekday meal is taco salad, we recently bought the taco molds and it is so easy!
