Hello weekend! Any fun plans besides meal planning? 🙂 We have some good recipes for you to make this week! Let us know which ones you are looking forward to! The tortellini salad, flatbread, and banana cake are all calling my name! ENJOY!

Monday (2/15): Mexican Tortellini Salad– Cheese tortellini with black beans, tomatoes, corn, avocado, cotija cheese, and a simple cilantro vinaigrette. We love this pasta salad!

Tuesday (2/16): Lemon Chicken Orzo Soup– This simple chicken soup is perfect for a chilly night! Serve with crusty bread!

Wednesday (2/17): Spinach Artichoke Quinoa Bake– This easy, cheesy quinoa bake is a family favorite!

Thursday (2/18): Eat leftovers for dinner! Make Baked Blueberry Coconut Oatmeal to reheat for breakfast in the morning.

Friday (2/19): Meyer Lemon, Kale, and Goat Cheese Flatbread– This easy flatbread is the perfect Friday night dinner! Make Whole Wheat Toasted Oatmeal Chocolate Chip Cookies for dessert!

Saturday (2/20): Honey Yogurt Waffles– Start your Saturday with waffles! Get takeout or eat leftovers for dinner.

Sunday (2/21): Baked Gnocchi with Sausage, Kale, and Pesto– Our boys love this easy baked gnocchi! Enjoy Easy Banana Cake with Peanut Butter Frosting for dessert!
