Why do Mondays always sneak up on us so quickly? I am never ready for them! The weekends are so much better. Sorry, Monday, but you aren’t my favorite day.

I was a little extra excited to get up this morning because I knew what I was going to eat for breakfast-Baked Peach Almond Oatmeal. I usually eat regular oatmeal every morning, but yesterday I made special oatmeal.  I knew I would be feeling lazy on Monday morning so I made the oatmeal in advance and I am so glad I did. Waking up this morning wasn’t so bad!

We love baked oatmeal at our house. It is a real breakfast treat! A few of our favorites include Baked Blueberry Coconut Oatmeal and Apple Cinnamon Baked Oatmeal.

We still have a million peaches to use up so it was only natural that I created a baked peach oatmeal. And since I love almonds, I added them to the mix! I used Almond Breeze Vanilla Unsweetened Almond Milk and threw in some chopped almonds too!

I used to eat those instant peaches ‘n cream oatmeal packets when I was a kid. Don’t judge, I was a kid. I didn’t know how easy it was to make real oatmeal:) My Baked Peach Almond Oatmeal reminds me of that oatmeal, but SO much better. Like a bizzilion times better.  And I promise it is easy to make, just as easy as those packets.

You can make a big pan and reheat it during the week! I made a pan on Sunday and I know we will be eating it for breakfast for a few days. I reheat it in the microwave and it is ready in seconds! I like to serve it with an extra splash of Almond Breeze milk, it adds the perfect creaminess!

I guess I will be getting up early this week. I am one of those people who thinks about breakfast the second they wake up. I might even think about breakfast sooner. I am sure I dreamt about Baked Peach Almond Oatmeal last night. Talk about sweet dreams!

If you want a reason to wake up in the morning, make Baked Peach Almond Oatmeal. You will be waking up with a smile! And this is a great recipe for back to school time! The kiddos will eat it up and you can prepare it the day or night before! Big time bonus when you are running around in circles in the morning trying to get everyone ready for school! Baked Peach Almond Oatmeal

Baked Peach Almond Oatmeal is a great morning treat. Make a big pan to feed a crowd or to reheat during the week for an easy healthy breakfast!

Ingredients
  

  • 2 cups rolled oats
  • 1/4 cup light brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped almonds
  • 2 cups Almond Breeze Vanilla Unsweetened Almond Milk
  • 1 large egg
  • 3 tablespoons coconut oil, melted and cooled slightly (or melted and cooled butter)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 1/2 cups chopped peaches
  • Peach slices for the top, optional

Instructions
 

  • 1. Preheat the oven to 350 degrees F. Grease an 8x8 square baking dish and set aside.
  • 2. In a medium bowl, mix together the oats, brown sugar, baking powder, salt, cinnamon, and almonds.
  • 3. In another medium bowl, whisk together the almond milk, egg, coconut oil, vanilla, and almond extract.
  • 4. Arrange the chopped peaches on the bottom of the prepared baking dish. Pour the oat mixture evenly over the peaches. Pour the almond milk mixture over the oats. Gently shake the baking dish to make sure the milk covers the oats evenly. If desired, add a few sliced peaches to the top of the oatmeal. It makes the oatmeal look pretty:)
  • 5. Bake for 40 minutes, until the top is golden and oatmeal is set. Let cool for 5 minutes and serve warm.
  • Note-this baked oatmeal is great reheated in the microwave. We like to add a splash of almond milk for extra creaminess! This recipe can easily be doubled for a 9x13 pan. Use gluten-free oats to make this recipe gluten-free.

  28. Is there a substitute that I can use for the brown sugar? I follow a strict way of eating and brown sugar is not allowed. I usually use things like honey or agave syrup in place of the sugars…do you think that it will be fine?

  31. Delicious! Just made this for dinner and it was a hit with both kids (2 and 4) and my husband! My husband does not like almonds so I omitted the almond extract and added 1/4 cup almond meal for the chopped almonds to add some protein. Thanks for a great peaches breakfast for dinner recipe!   34. Thank you for a delicious oatmeal recipe that my child loved making and eating. The only mishap is I purchased nectarines instead of peaches, don’t know what I was thinking. So we improvised I had some peach fruit cups which I rinsed and lined the bottom along with the nectarines and sliced some nectarines in the top. Still was yummy and a time saver in the morning. Lasted for the school week.

    I’ve used this recipe to make several varieties of baked oatmeal. I put it together at night and bake in the morning, tonight I made the oat mix, I’ll add sweet dark cherries in the morning and bake. I love it with peaches, too.

    I have been making this Baked Oatmeal since 2013! I have switched it up with different fruits and nuts-good every time. We have a great grand daughter who is 5 1/2, and “loves” Gramma’s Special Oatmeal! I also add 1 c of unsweetened coconut flakes, which I took from your Baked Blueberry Coconut Oatmeal recipe. My grand daughter happens to love the peaches, more than blueberries, and I like the added coconut flavor!

  48. Love this Baked Peach Almond Oatmeal. Once I made a double batch to use up some peaches. Popped it in the oven and headed out for a walk. My ‘decorator neighbor’ down the street was having a yard sale and I said I couldn’t stay because I had to get my walk in before my baked oatmeal came out of the oven. She and her husband said they had never heard of baked oatmeal. I told her if she put aside a vintage serving dish I had my eye on, I would pick it up on my way back from my walk, wash it and return it filled with the baked oatmeal as a trade. She and her family loved the Peach Oatmeal and brought the empty dish to me with a thank you note and a request for the recipe! (2016)
    I’ll have to post a picture once this batch comes out of the oven!

    I just made this for my family yesterday morning. INSANELY DELICIOUS. We all love to have oatmeal in the morning so this was a welcomed spin off of what we traditionally eat. We even subbed in gluten free oats, flax seed (to replace the egg) and oat milk. It was incredible. The recipe calls for the perfect amount of almond extract that lends to this really delicious flavor. We had leftovers so I just ate some for breakfast this morning and it was just as good as the day before! You know a recipe’s a winner when my mom asks for the recipe to be shared with her. 🙂

    This is a favorite breakfast recipe of mine as it does last a whole week. I add more fresh California Elberta Peaches than the recipe calls for, I substitute Planet Oat Milk for the Almond Breeze and I prefer using only the Vanilla Extract. I’ve even had a scoop of Vanilla Ice Cream on top of this Peach Oatmeal Recipe as dessert in the evening! I so appreciate your recipes Maria – thank you!

    This was fabulous! I used a little less brown sugar, replaced the coconut oil with applesauce and used a flax egg and it still came out beautifully. Thank you for such a great recipe!

    This baked oatmeal is sooo good! Our family prefers oatmilk so, I used plain oat milk and added an extra tsp of vanilla. Also, I used one flax egg instead of the egg ( 1 T. flaxmeal, 3T. water). I used 3 T. Earth Balance in place of coconut oil/butter. And, after combining the dry ingredients in one bowl and the wet ingredients in a separate bowl, I poured the liquid mixture over the dry mixture and stirred to combine.Then, I poured it all over the peaches and baked it.

    1. Curious of the same. I can fresh peaches every summer, wondering if they would be ok to use in this recipe. Guess it can’t hurt to try! If I get around to baking it today I’ll reply.

  54. Excellent, especially for this time of year! I had these lovely but damaged peaches STILL in my fridge. I chopped them last night so, I used a little more. Had to use up what I had, so it was pecans instead of almonds, 1-1/2 T coconut oil, 1-1/2 T butter for the whole 3 T coconut, and 1 c almond milk with 1 c cows milk. It looked a little liquidy ,so I put 1/2c of muesli on top, and then pressed it down w the back of my spoon. Perfection. I also put both the coconut oil and butter in the 8×8 pan in the oven while it heated up and added it to the milk mixture once it had cooled. Very forgiving recipe! Thank you.

  55. I’d like to try this but it’s not peach season…would frozen or canned peaches work? Would I need to make any changes to the recipe? Also can I bake this in a muffin pan? Thanks

    1. I would use frozen over canned peaches. A muffin pan should be fine, just reduce the baking time.
