Black Bean, Pomegranate and Avocado Salsa

Black bean salsa with pomegranate arils and avocado! This festive salsa is perfect for holiday parties!

Ingredients
  

  • 1 15 oz can black beans, rinsed and drained
  • 2 cups pomegranate arils
  • 1 small jalapeño minced, seeds removed
  • 1/4 cup red onion chopped
  • 1/4 cup cilantro chopped
  • 1 large avocado diced
  • 2 tablespoons fresh lime juice
  • Salt and freshly ground black pepper to taste
  • Tortilla chips for serving

Instructions
 

  • In a medium bowl, combine black beans, pomegranate arils, jalapeño, onion, cilantro, avocado, lime juice, salt, and pepper. Gently stir. Serve with tortilla chips.
  • Note-This salsa is best the day is made.

  8. This is amazing. Made it for a birthday celebration, along with the Roasted Chickpea fajitas. So good – crunchy, juicy, creamy, tart, a little spicy. I devoured the leftovers and I’m already planning to make another batch. It kept well for a couple days with hardly any browning of the avocados. Must be the lime juice…

  10. Our backyard pomegranate bush is a GREAT producer – but a pain because it’s always been a hassle getting those red seeds out of the hull without turning red yourself!!! Well this past Christmas, I found an awesome tool at Sur la Table called The Pomegranate Tool. Removes the seeds in quick order and doesn’t turn your counter into a bloody mess…recommend highly!!! Can’t wait to try this colorful salsa…

    The first time that I made I left out the black beans and avocado and was left with a very refreshing salsa.  This is a keeper recipe. So special for the holidays. I may use instead of cranberry sauce on Thanksgiving. Next time I will add the beans and avocado as an appetizer. I am sure it will also be delicious.
