Soft lemon pudding cookies with dried blueberries and white chocolate chips. A great cookie for summer!

Lemon Blueberry Pudding Cookie Recipe on twopeasandtheirpod.com Super soft lemon cookies with dried blueberries and white chocolate chips!

School is out for the summer and the neighborhood kids are out and about. We live across the street from the park so we see lots of kids coming and going. Caleb loves sitting on the porch so he can wave to everyone. I like sitting on the porch so when friends walk by, I can give them cookies. I made Lemon Blueberry Pudding Cookies and passed them out to everyone that walked by. Cookies are a great conversation starter! I love sharing cookies, but I love catching up with our neighbors even more. It’s great to see everyone after hibernating for the winter.

I love making pudding cookies because they are soft and stay soft for days. Plus, everyone loves them. Every time I make a pudding cookie, they get rave reviews. A few of my favorites include: Oreo White Chocolate Pudding Cookies, Butterscotch Pudding Triple Chip Cookies, and Vanilla Pudding Chocolate Chip Cookies. These Lemon Blueberry Pudding Cookies are also at the top of my list. They are delicious!

I used a lemon pudding mix to make the cookies. I also added in the zest of one lemon to bring out the lemon flavor. I added in dried blueberries because lemon and blueberries are a match made in heaven. The dried blueberries are sweet and add a nice chewy texture. I also threw in some white chocolate chips because chocolate is always a good idea if you ask me!

These cookies are soft and chewy with a refreshing lemon flavor. Josh loved them and so did all of neighbors that walked by.

And you want to know who else who loved them? Our little pea! He snuck up on me while I was taking pictures and tried to help himself to a plate of cookies. He’s a little cookie monster!

Brighten your day with a batch of Lemon Blueberry Pudding Cookies. I think I will make a batch for the 4th of July. They are missing the red part of red, white, and blue, but oh well:)

And if you are in our neighborhood, wave to us on the patio and ask for some cookies. We are always happy to share! We love spreading the cookie love!

Ingredients

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a Silpat baking mat and set aside.
  • In a small bowl, rub the granulated sugar and lemon zest together, using your fingers, until fragrant. Using a mixer, beat together butter and sugars until creamy. Add in lemon pudding mix, eggs, and vanilla extract. In a medium bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the dried blueberries and white chocolate chips.
  • Drop cookie dough by rounded tablespoons onto prepared baking sheet. Bake for 10 minutes, or until slightly golden around the edges and set. Remove cookies from oven and let cool on baking sheet for two minutes. Transfer to a cooling rack and cool completely.
  • Note-you don't need to make the pudding, just add in the dry pudding mix. These cookies will stay soft for 3-4 days. Store in an air-tight container on the counter.

  1. Ive been wanting to make blueberry and white choc cookies for awhile but haven’t picked up the dried blueberries that I know I need for them. Your cookies make me want to go get some, asap!

  4. Hello Maria!! I’m so excited to try your recipe, but I don´t know what is “lemon instant pudding mix.” I’m in Brazil, if you can explain what it is, I´ll try replacing this ingredient. I read your Blog everyday, I love your stories. Thanks and congratulations!

    1. It is a boxed pudding mix, a powder. I don’t know what you can use instead. Sorry!

  5. I just love the picture of Caleb, all ready to attack on the cookies. Such a cutie he is. Bless him! 🙂

  6. This combination of flavors looks delicious! I’ve never baked with pudding mix but it looks like it’ll add a nice, soft texture.

    1. I haven’t tried fresh blueberries, but I am sure they would be good. They would probably be best eaten the first day or two.

  7. These sound incredible! I love the white chocolate and actually think it sounds better in these cookies than chocolate would! The blueberries sounds delicious with the white chocolate! I wish I was walkin by your front porch so I could get one of these!

  8. These are amazing, maria! I love lemon and blueberry combinations and it’s so brilliant to put them in a cookie! Pudding in cookies are hands-down the best, too! So soft 🙂

  9. Totally making a batch with blueberries & a batch with cherries for the 4th! Thanks for the yummy recipe!

  10. Love that you made cookies and passed them out! Such a sweet neighbor! I honestly would probably be hiding in my closet with these, refusing to share 🙂

  11. I love that you hand out cookies to people walking by… now, um, where do you live again!? I totally want to stroll by so I can grab one of these!

  12. Pudding mix gives cookies such a great texture, love the flavor combination here as well!

  13. What beautiful photos. For father’s day, I made your coconut white chocolate chunk cookies (with the coconut creme jello mix). He said they are his new favorite cookies!

  14. Aw, passing out homemade cookies is such a sweet thing to do as people walk by your house! It has such a friendly, 1950’s feel to it. And dried blueberries + lemon + chocolate chips is such an interesting/yummy combo!

  15. Totally unrelated to the cookies 🙂 But I have a 17 month old son who is starting to become a picky little eater. How do you get your litte man to eat such a variety of stuff. Ours is teething his molars right now and isn’t eating much of anything. But when not teething, he’s starting to become picky.

  16. These look so good, and so summery! I haven’t tried to make a pudding cookie – definitely putting pudding mix on my grocery list. They sound so great!

  17. These cookies look irresistible! Love lemon and blueberries in any form. Your lil pea is adorable, love the shot of him trying to sneak a cookie 🙂

  18. Haha! Caleb has SO got the right idea with these cookies… don’t just grab one, grab the napkin and get yourself that whole plate! These look fantastic, Maria.

  19. Caleb is so cute! He’s always trying to help himself to some cookies! Must be awesome having the cookie queen as your mom 🙂

  20. Love that you added pudding mix to these cookies, I can only imagine how great that makes them… great idea! Yummy summer time cookie!

  21. Yum, great cookies! I posted a recipe close to this, called Lemon Blueberry Mini-Loaves. Same combo! Neat!

  22. What a sweet idea to sit on the porch and pass out cookies to the park-goers! I get it, because I’m always looking for people to give baked goods to… just so I won’t eat it all by myself. And so my kids won’t go sugar crazy eating it all. Gotta share 🙂

  23. I love these and this recipe! The photography is spot on 🙂 The checkered table cloth and the straw are too cute!

  24. These cookies look so amazingly chewy! And gotta love that lemon blueberry combo. it’s really the best.

  25. I bet the pudding really makes these cookies moist. Sounds and looks awesome!

  26. Ooh you could put in craisins for the red part! Looks so good. I have never tried pudding cookies!

  27. These are delicious, but came out of the oven flatter than Kansas. I live in Denver. I used high alt flour, which usually does the trick, not so this time. Any ideas on how to make these work at high alt? Thx

  28. Think I could try it with frozen blueberries? I’d love to try these, but don’t have any dried blueberries 🙁

    1. Fresh blueberries would work. Frozen blueberries might turn the cookies purple, but you can try it!

  29. These cookies are wonderful!!! So moist and flavorful. I liked your idea about including a red fruit with the blue berries. I used dried red raspberries, substituting for half of the blueberries. Lemon and blueberry flavors – match made in heaven! Lemon and raspberry flavors – ditto! Lemon, blueberry AND raspberry flavors all together?? A-MA-ZING! This recipe is a keeper!

  30. Hi Maria
Love your Blog! Caleb is adorable!
These cookies are delicious. Is there a way to revise this recipe and make it gluten free. I have seen gluten free Bisquick baking mix. Haven’t tried it yet. Probably wouldn’t need baking soda.
Ok, let me know if you come up with anything.

  31. I love your blog and have made many of your recipes and every one of the has been great so far. I do have one question though how do you get your cookies to spread out? While mine taste great they don’t look as pretty as yours do. They seem to stay pretty compact mounds not sure if it has to do with the cookie scoop I use or what might be the issue.

  32. Went on a little cookie making spree. These are delicious and have great flavor! A bit sweet and buttery – but great for a special occasion. Thanks!

  33. I’ve made these twice and everyone’s loved them! However I haven’t been able to get them as nice and flat as the ones in the picture.

For the second batch I tried reducing flour by 1/3rd-1/4th cup or so and they’re still pretty puffy. Anyone have any suggestions?

  34. If I didn’t wanna use the instant pudding mix, can I substitute with something else? I’d love to try this recipe, I just don’t like the premixed stuffs. Thanks! 🙂

  35. I tried these yesterday for the first time and I must say they were the best cookies ever!!! The instant pudding made them so yummy and chewy, can’t wait to experiment with instant pudding in my other cookie recipes!! Thanks again they were amazing!!!

  36. I made these and they were great! A unique combination and very moist (is that the impact of the pudding mix?) Making a second batch now to freeze for later!

  37. I just love these cookies! I made them for easter and everyone loved them. My mom wouldn’t stop eating them. Thank you so much for the great recipe.

  38. Making these right now and they smell AMAZING! But the batter turned out much too dry and cookies are falling apart and not turning out much like cookies at all. Adding a bit of butter now to moisten!

  39. These tasted good but were so soft we had to scoop them up. One of my cookie-baking friends said I should have used only have the amount of butter & the rest should have been shortening. Sounds yucky but worth a try perhaps. I won’t make them again.

  40. these were delicious…seriously divine for a lover of lemon. I did choose to leave out the white chocolate and they were still delicious and worthy to give as a gift.

  41. You mentioned that you were thinking of making these for the Fourth Of July & all they were missing was the Red ? Why not add some Cranberry Craisins , for a bit more flavor & your Red color as well ? 😉

  42. I made these yesterday (sort of) I only had dried Huckleberries but let me tell you Squad #28 at the Air Force Academy gobbled them down in 11 minutes (Yes, I timed them…)

  43. I’ve made these and they’re a BIG HIT! I’ve changed them up a bit and used white vanilla chip with the blueberries and also used cranberries with the white vanilla chip! Brought them to work and family gatherings! They’re perfect for a baby shower and wedding shower! Love these cookies!

  44. 5 stars
I love this recipe and have made it several times. It’s always a huge hit. The only thing I do different is add juice of 1 lemon to the batter. I’ve also made this gluten free.

  45. Hi Maria! I just made these cookies and they taste very good but they’re thick, not flat like yours in the pictures. Should I have flattened them a bit before baking?
Also, I bought a sugar free lemon pudding mix and it’s 1oz as opposed to the standard 3.4oz box. So according to the recipe, I’d have to buy 3 boxes? This doesn’t seem right given the boxes are the same size.
