No-Bake Almond Granola Bars-these easy granola bars are made with almond butter and almonds! They are a great lunch box or on the go snack!

I have two growing boys in the house and they are always saying, “Mommy, I’m hungry!” I am a little nervous what they are going to eat when they are teenagers. Yikes. I do hope that they still call me mommy when they are teenagers. Wishful thinking? Probably:)

I like to keep homemade granola bars on hand so I can feed them to my hungry little hippos when they are starrrrrrrving. They are currently loving these No-Bake Almond Granola Bars.

I love making homemade granola bars because they are easy and much better than store bought. I also love this recipe because they are no-bake granola bars, I told you they are easy! They whip up in no time.

The bars are made with almond butter and Blue Diamond Roasted Salted Almonds. I love the kick of salt and crunch the almonds add. They are perfect in the chewy granola bars.

You can keep the granola bars in the fridge for up to one week. They are a great on the go breakfast, lunch box treat, or anytime snack. I love pulling them out of the fridge when our boys are about ready to pass out because they are so hungry:)

And if you want to go all out, you can drizzle a little chocolate over the top and eat them for dessert. These No-Bake Almond Granola Bars are good anytime of the day! Enjoy!

No-Bake Almond Granola Bars

These easy no-bake almond granola bars are great for breakfast on the go, a lunch box treat, or anytime snack.

  • Spray an 8x8-inch square Pyrex pan with nonstick cooking spray. Set aside.
  • In a medium bowl, combine the oats, cereal, almonds, and salt. Stir and set aside.
  • In a large sauce pan, add butter, brown sugar, honey and almond butter. Heat over medium-low heat, stirring occasionally until the mixture starts to bubble. Once bubbling, cook for 2 minutes while stirring. Remove from heat and stir in the vanilla extract.
  • Stir in the dry ingredients. Stir until well coated. Pour into the prepared pan and press the mixture evenly into the pan. If desired, drizzle melted chocolate over the tops of the bars.
  • Place the bars in the refrigerator and let cool for at least 30 minutes before cutting. Cut into bars and serve.
  • Note-the bars will keep in the refrigerator or on the counter for up to one week.

  1. I had to make these today. All I needed at the store was some almond butter. They were so simple to make. My kids and the neighbors kids devoured them when they got home from school. Even my picky kids loved them.

  2. I can’t wait to try these! Our family loves your other granola bars so much, and I make doubled batches often. I notice that you call here for 1/3 cup almond butter instead of ¼ cup like your peanut butter/sunflower butter versions. Is the 1/3 cup correct? Thank you!

  4. Hi — What’s the best way to melt the chocolate chips so they are the right consistency to drizzle? Do you add a little water?

    1. Don’t add  water, the chocolate will seize up.  If you  need to thin the chocolate add a bit (start with a teaspoon, or even half that) of vegetable oil or shortening. Add as needed.

    2. Oh, and I melt chocolate several ways: my favorites are  either at 30 second intervals in the microwave or in a very heavy sauce pan on low heat.

  5. Holy crap are these bars good! The boyfriend and I made a half batch today (which totally works in case anyone’s wondering) with the intention of eating them as a grab and go breakfast this week but… there are only 2 left

  6. Made these the other day and OMG. Delicious! I didn’t have almond butter or almonds, so I substituted them for what I already had in the pantry (peanuts and peanut butter). Will definitely keep this recipe on hand in the future. 

  7. These look awesome and i want to give them a try however, I don’t do well with sugar / brown sugar.  Will they still stick together if I don’t use the sugar?  Or should i change the amt of another ingredient?

    I love your recipes! Your combinations are just wonderful and very helpful in feeding all in the family, including a vegetarian husband!

    Thanks for sharing this recipe. We made them today. They were great. We have tried other recipes for no bake granola bars, but this is the best by far! Taste great AND simple to make!! I didn’t have almond butter so I substituted peanut butter.

  9. I’ve made these nearly a hundred times and they’re just the best. There aren’t that many recipes that are that delicious AND easy. I think they’re even better by substituting almond extract for the vanilla, but you can’t lose either way. Also less healthy I’m sure, but I double the chocolate and have enough to spread it ALL over the top instead of just drizzle! Also – for my sweet tooth- I use 3 parts semi sweet to 1 part milk chocolate chips.

    Delicious! I had peanuts so I used them instead of the almonds. Great recipe thank you! Wonderful gluten and dairy free snack- dairy free butter works great!
