Portobello Mushroom Burgers & A Giveaway

Jump to Recipe

Last weekend we had a tailgating party. Josh was in charge of the grill and made Bacon Wrapped Bratwursts and Portobello Mushroom Burgers. We wanted to make sure we had something to eat for the meat lovers and veggie lovers. Josh enjoyed a Bacon Wrapped Brat while I enjoyed a juicy Portobello Burger. If you haven’t tried a portobello burger, I don’t know what you are waiting for. Portobello Burgers are thick, chewy, and filling. They make a great meatless meal, but even if you aren’t a vegetarian, you can still enjoy these tasty burgers.

Josh lightly brushed the portobello mushrooms with olive oil and seasoned them with salt and pepper. He grilled each side of the mushrooms for a few minutes. When the mushrooms were almost done, he placed a piece of provolone cheese on top of each burger and continued cooking until the cheese was melted.

I placed my cheesy portobello burger in a ciabatta bun and topped it with lettuce, tomato, red onion, and mustard. Of course the pregnant lady had to have a pickle on these side..ha! We also served up Bush’s Vegetarian Baked Beans to go with the portobello burgers. I love that they have a vegetarian option. They went perfectly with my portobello burger.

Portobello burgers are satisfying, delicious, and perfect for game day. Give them a try at your next tailgating party!

  27. Grilled Bacon-Wrapped Stuffed Hot Dogs (close to Josh’s brat)

    • 1 t ketchup
    • 1 t Dijon mustard
    • 4 hot dogs
    • ½ ounce cheddar cheese, cut into long sticks
    • 2 T chopped onion
    • 1 C refrigerated sauerkraut, drained, roughly chopped
    • 4 bacon slices
    • Vegetable oil
    • 4 hot dog buns

    Start grill

Mix ketchup and mustard. In a separate bowl, mix the sauerkraut with the chopped onion, set aside. Slice open the hot dogs, down the center, forming a pocket in each, but not cutting all the way through. Coat the inside of each hot dog with the mustard ketchup mixture.

Place strip of cheese in the pocket of each hot dog. Top with sauerkraut and onion. Encapsulate the cheese at the ends with the sauerkraut mixture as well, so that no cheese is exposed (or it will drip out when cooking).

Wrap a strip of bacon around each stuffed hot dog, securing with a toothpick at each end. Wrap tight enough so that the stuffing stays in, but not so tight so that when the hot dog expands the bacon tears.

Coat grill with vegetable oil so the hot dogs don’t stick. Place the stuffed hot dogs on the grill, stuffing side down. Grill for 2 minutes, until the bacon on that side is cooked, turn a quarter turn and grill for a couple more minutes…Continue until all sides are cooked.

During the last minute of cooking, open the buns and place them open-side down on the grill to lightly toast.

Remove hot dogs and buns from the grill. Remove the toothpicks from the hot dogs…Enjoy!
