Cookies hold a special place in my heart. They just make me happy…and my tummy happy too! I have A LOT of favorite recipes, but these Oatmeal Coconut Chocolate Chip Cookies are at the very top of the list. I have been making them since I was little so there is the nostalgic factor, but they are also VERY delicious.

This cookie recipe is a good one to have in your regular repertoire. They turn out perfect every time, everyone loves them, and they are a classic. You can’t go wrong!

The cookies are soft, chewy, sweet, and have the perfect amount of coconut and chocolate. I use sweetened coconut and semi-chocolate chips, but if you prefer milk or dark chocolate, go for it! The cookies are great on their own or dunked in a glass of cold milk!

How to Store

The cookies will keep in an airtight container on the counter for up to four days. You can also freeze the baked cookies for up to 3 months. Place in a freezer bag or freezer container and freeze. They are good frozen or you can let them come to room temperature.

If you want to freeze the cookie dough, shape the dough into balls and place the balls on a baking sheet or tray. Place in the freezer for 30 minutes or until balls are hard. Transfer to a freezer bag or freezer container and freeze for up to 3 months. When ready to bake, preheat the oven and bake! You don’t have to defrost the dough, just add a few minutes to the baking time.

FAQ

Can I use quick oats?

I prefer old fashioned oats for this recipe.

Do you use sweetened or unsweetened coconut?

I like to use sweetened coconut flakes, but unsweetened will work too.

Do you use unsalted or salted butter?

I like to use unsalted butter so I can control the amount of salt in the recipe. If you only have salted butter, you can use it, just adjust the salt to your taste.

What kind of chocolate chips do you use?

I like semi-sweet and Guittard is my favorite brand. You can use milk or dark chocolate chips. You can even try white chocolate, butterscotch, or peanut butter chips!

Coconut Oatmeal Chocolate Chip Cookies

Soft and chewy coconut oatmeal cookies that are dotted with chocolate chips! These cookies are a family favorite!

  • Preheat oven to 350 degrees F.
  • Whisk together flour, baking powder, baking soda, and salt into a bowl. Set aside.
  • Cream together sugars and butter with a mixer. Add egg and vanilla and beat until combined. Add in the dry ingredients and mix until just combined. Don't over mix.
  • Stir in oats, coconut, and chocolate chips.
  • Roll the cookie dough into balls or use a cookie scoop, about 1 tablespoon of dough per cookie. Place on a large baking sheet that has been lined with parchment paper or a Silpat baking mat, about 2 inches apart.
  • Bake for 8 to 10 minutes or until tops are slightly golden. They will still be soft. Let sit on cookie sheet for 2 minutes and transfer to a wire cooling rack to cool completely.

  19. Tried these today! Omg they are a BOMB! My hubby adores coconut and melted choc chips.
    One remark – balls of dough did not melt into flat cookie shapes. I had to press them down with a fork half way through. And second batch was shaped into flat cookies from the beginning. Didn’t affect deliciousness of this miracle of course! Yuummmmmm!!!!

    Made these this morning.  Flavor was good, I eliminated the white sugar and increased the brown sugar to 3/4 cup.  As I don’t care for soft cookies, I increased the bake time to 18 minutes…still weren’t crisp enough for my taste.  Otherwise, I like the flavor but wish they were crisper.

    If I could give these cookies a higher rating, I would. They’ve become a family favourite and I often make them – they go so quick I double it every time and make about 50 cookies! I chop up two blocks of Whittaker’s dark Ghana for the chocolate, and it takes the cookies to a new level of irregular chocolatey heaven :)) thank you for this recipe!

  30. These are great! Easy to make. I also love that the recipe is for a good amount and not 4,5,6 dozen. For my personal taste they are a bit sweet. Do you think I could half the sugar in the dough and still maintain the integrity of the overall cookie? Thanks.

  31. Trying them for the first time – I doubled the recipe, using two jumbo size eggs and then found I needed to add an extra egg to make it all come together. Love the idea of chocolate (yummy), coconut (chichis anyone) and oatmeal (git yer Scot on) in one cookie

    1. I used minute oats, only brown sugar and I toasted my coconut also and flattened them a bit before baking.
      The middle was soft and edges crunchy. Soooo good!

    These were so good! I used quick oats bc I didn’t have rolled, but texture was still great! I don’t always love the texture of shredded coconut but it blended in well! My kids loved these, crispy and chewy all at the same time, I will definitely make again!

    Love these cookies!!! Still soft and chewy the next day which is so important to me! I made a few tweaks and thought I’d share them. I used quick oats as opposed to traditional to keep the consistency with the shredded coconut more similar (personal preference). Also I made the first half of the batch without chocolate chips added, and instead I placed a milk chocolate square on top (or buried in the dough) and that was really really yummy! Of course the chocolate chips are also great, but I think I prefer the flavour of the milk chocolate with the coconut. You could even make these without the chocolate chips and they are still to die for! Thank you so much!!

    Best biscuit I’ve made in along time, I altered the quantity of butter to only 105 grams and used a mixture of milk and white chocolate, left in for 15 minutes, has a nice crunch

  38. Hello!! These are ideal cookie for I love coconut, oats and chocolate! I’ve made them 3x now but 2 of the 3 times the dough was too goopy and the cookies didn’t form well. I made sure to have room temp butter – not right from the fridge. Have double checked the measurements too! Any thoughts on why it’s too runny? Thanks! 🙂

      I made these today, and they are sooooo good! I did use 3/4 cup whole wheat flour and 1/2 cup unbleached flour, and added 1 cup of walnuts too.

  44. After trying for the first time (and they were amazing) I used same recipe using an extra half stick of butter & used 1/2 of chocolate chips + 1/2 caramel chips (sticking to your ratio) and then added 1/4 cup marshmallows and they were also amazing)

  47. Growing up in the rainy Northwest, I often watched and sometimes helped my mom bake her chocolate chip cookies and oatmeal cookies with chocolate chips. Eventually I could make them myself. I decided to add coconut and walnuts to the oatmeal chocolate chips and everyone went crazy happy. Like it was candy. It was a big hit in the 1960’s in my neighborhood.

    These cookies were exactly what I had in mind when I did a recipe search. Thanks so much for sharing! I thought I was going to say I made them exactly as written, as that was my intention, until I discovered I only had half of the semi-sweet chocolate chips on hand. But some milk chocolate chips came to the rescue! They ended up being about half of each kind and I’ll do the same again when I make them next. I made a double batch, scooped half onto a baking sheet and put them in the freezer so they’d be firm enough to bag and put into deep freeze for another day. By the time I baked the other half, did some other meal prep and washed the dishes I was able to bag them up and into the freezer. Measure once, do dishes once, have fresh cookies twice! Or a gift to give away. Win!

      Excellent cookies! I was looking for a replacement for Save Mart’s house brand. This tops it. I used vegetable shortening and it came out a little dry so I added a couple of tablespoons of buttermilk. Perfection. I’ll keep this one handy Thanks

I topped them with a little course salt at the end and froze the dough about 10-15 mins before baking so it took a little longer for them to cook but they turned out PERFECT! I also slapped the pans while in the oven to flatten them out a little. (My family is super picky about thin crispy cookies ) lol. Again, another keeper ! My family will LOVE these

    Just made those cookies and they are exactly the type of cookie I love. A little crunch but soft in the middle. I was a bit worried about all the dry ingredients with only a half cup of butter but they are perfect. Did not change a thing other than I cooked mine about 11 minutes.     1. I am glad you loved the cookies. I haven’t tried bars. I am guessing 25-30 minutes in a pan, but check early to be safe. You can use sweetened coconut. Let me know if you try bars!

    So delicious! I modified this recipe slightly to be vegan (flax seed egg & vegan butter) and they turned out beautifully! These will go to the top of my list of favorite desserts.

    1. I haven’t tried adding chia seeds. I am sure you could add a tablespoon or two and it would be fine.

    A really sweet salty cookie. I added less coconut and chips and subbed in some pecans. Definitely cook these until they are golden brown all over or they will be doughy in the middle and undercooked. Hubby was so happy with these cookies and a mug of milk. Thank you

    Simple and Scrumptious !!!
    I did add a cup of chopped walnuts, successfully and cookies looked so much like your picture and where chewy with a “coconut maroon” type taste and texture.
    I also used my favorite dark chocolate chip.
