Cook the shallot in olive oil. Cook the spinach next, followed by the garlic.


Stir in the beans and vegetable broth. Season with salt, pepper, and crushed red pepper flakes.


Simmer, then stir in the Parmesan (or nutritional yeast) and lemon juice.
