Start by cooking the pasta. Meanwhile, whisk together the eggs and cheese, then set aside.

Cook the bacon (or pancetta), followed by the garlic. Reserved some starchy water when the pasta has finished cooking. Then, drain the pasta.

Add the pasta to the skillet and toss, then remove from heat. Pour the egg/cheese mixture and whisk.

Season with salt and pepper. Garnish the pasta before serving.
