Sweet Corn Salad

Recipe from Two Peas and Their Pod

Ingredients

  • 3 ears sweet corn husks removed
  • 2 medium tomatoes chopped
  • 1 red pepper chopped
  • 1/2 red onion chopped
  • 1/2 bunch fresh cilantro chopped
  • 1 small jalapeno diced, seeds removed
  • Juice of 2 limes
  • 1/3 cup feta cheese
  • Salt and pepper to taste

Instructions

  • 1. In a large pot, bring water to a boil. Gently add the sweet corn to the boiling water. Cook 2-3 minutes. Remove from water and let cool. Once cool, remove the corn kernels with a knife. Discard the ears.
  • 2. In a large bowl, add the tomatoes, red pepper, red onion, cilantro, and jalapeno. Stir in the sweet corn. Add the lime juice and stir again. Sprinkle salad with feta cheese, salt, and pepper. Gently stir.
  • 3. Serve cold.
  • *Note-you can add black beans or serve this as a side salad to fish, chicken, or any meat. It is also good with tortilla chips.
