- 3/4 cup plain Greek yogurt
- 1 large avocado
- 1 clove garlic
- 1 tablespoon lemon juice
- 1 tablespoon chopped dill
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 jalapeño pepper, seeds removed and minced (optional)
- 1/2 seedless cucumber, peeled and diced
In a food processor, combine the Greek yogurt, avocado, garlic, lemon juice, dill, salt, pepper, and jalapeño (if using). Process until smooth, scraping down the sides and processing again, if necessary.
Scrape into a medium bowl and stir in the diced cucumber. Taste and adjust seasonings, if necessary. You might want a little more lemon, dill, or salt. Serve with cut up vegetables, pita chips, pita bread, or use as a salad dressing.
