For the Tacos:
- 8 oz halloumi cheese
- Olive oil for brushing cheese
- Kosher salt and black pepper to taste
- Corn tortillas
Preheat the grill or grill pan to medium-high heat.
Drain the halloumi and cut it into slices, about 1/2-inch thick. Pat dry with a paper towel.
Brush the halloumi with olive oil on both sides to prevent sticking to the grill. Season with salt and pepper, to taste.
Place the halloumi on the grill and grill each side for about 2 to 3 minutes, or until the cheese has golden brown grill marks. Remove the cheese from the grill.
Heat the tortillas over the grill, 15-30 seconds on each side.
Top each tortilla with grilled halloumi, avocado slices, purple cabbage, creamy cilantro lime dressing, mango salsa, and cilantro. Serve immediately with lime wedges.
