- 4 flat pita breads
- 1 cup shredded chicken, we use rotisserie chicken
- 10 tablespoons barbecue sauce, divided
- 1 1/2 cups shredded mozzarella cheese
- 1/4 red onion, thinly sliced
- Cilantro, for garnish
Preheat oven to 400 degrees F.
In a small bowl, mix chicken with 2 tablespoons of the barbecue sauce.
Spread 2 tablespoons of barbecue sauce evenly onto each pita. Top the pitas evenly with mozzarella cheese, barbecue chicken, and red onion slices.
Place each pita on a large baking sheet. Bake for 10 to 12 minutes, or until cheese is melted.
Remove from oven and garnish with fresh cilantro. Cut into slices and serve immediately.
