Peanut Butter Granola

  • 3 cups old fashioned oats can use gluten-free oats
  • 1/3 cup creamy peanut butter
  • 1/3 cup honey
  • 1/3 cup mini chocolate chips


  1. Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper and a Silpat baking mat and set aside.
  2. Place the oats in a large bowl.
  3. In a small bowl or glass measuring cup, combine the peanut butter and honey. Heat in the microwave for 20-30 seconds. Stir until smooth.
  4. Pour the peanut butter and honey over the oats and stir until oats are well coated. If you aren't using salted peanut butter, you can add a little salt.
  5. Bake granola for 25-30 minutes, stirring once, or until granola is slightly golden brown.
  6. Let the granola cool completely on the baking sheet without stirring. When the granola is cool, stir in the mini chocolate chips.
  7. Note-store the cooled granola in an airtight container or jar for up to 1 month.
