1tablespoonfresh lemon juice
1tablespoonwhole grain mustard
1head of cauliflowerouter leaves removed and discarded, cut into bite-sized florets
Kosher salt and black pepperto taste
Preheat the oven to 400 degrees F.
In a large bowl, whisk together the olive oil, lemon juice, Dijon mustard, whole grain mustard, and minced garlic. Add the cauliflower florets to the bowl and toss until the cauliflower is well coated.
Place the cauliflower on a large baking sheet. Season with salt and black pepper, to taste. Roast for 25-30 minutes, stirring once, or until the cauliflower is crispy and browned on the edges.
