Ingredients

For the Tacos:

  • 8 oz halloumi cheese
  • Olive oil for brushing cheese
  • Kosher salt and black pepper to taste
  • Corn tortillas

For Serving:

Instructions

  • Preheat the grill or grill pan to medium-high heat.
  • Drain the halloumi and cut it into slices, about 1/2-inch thick. Pat dry with a paper towel.
  • Brush the halloumi with olive oil on both sides to prevent sticking to the grill. Season with salt and pepper, to taste.
  • Place the halloumi on the grill and grill each side for about 2 to 3 minutes, or until the cheese has golden brown grill marks. Remove the cheese from the grill.
  • Heat the tortillas over the grill, 15-30 seconds on each side.
  • Top each tortilla with grilled halloumi, avocado slices, purple cabbage, creamy cilantro lime dressing, mango salsa, and cilantro. Serve immediately with lime wedges.
