This will help me tremendously in cooking for the Vegans in my family (I am not one of them!) as I am often at a loss as to what to cook for them versus what I am also cooking for the family carnivores. I can’t wait to try many of them, and I appreciate that they are simple enough to tackle on a weeknight after a busy day at work. I am the only vegetarian in my family, and I often eat only the non-meat items from the dinners I cook for my family (not satisfying at all).
