Rice Salad

Hearty rice salad made with chicken, broccoli, asparagus, cucumber, avocado, cilantro, green onion, and a simple sesame ginger dressing. This salad is easy to make and the flavors are incredible. Enjoy for lunch or dinner!

Start by making the dressing.


Combine the rice and chicken next.


Blanch the vegetables, then transfer them to a bowl of ice water. Drain and dry the veggies.


Add broccoli, asparagus, cucumbers, avocado, green onion, and cilantro to the rice and chicken. Stir in the ingredients and drizzle with dressing. Sprinkle sesame seeds, stir once more, and garnish before serving.
