1/4cupcreamy almond butter
1/4cupunsweetened applesauce
1/4cuppure maple syrup
1large egg
2teaspoonsvanilla extract
1cupoat flour*
1/2teaspoonsbaking soda
1/2teaspoonkosher salt
1teaspoonground cinnamon
1/4teaspoonground cloves
1/4teaspoonground nutmeg
1cupold fashioned oats
1cupgrated apple,I use Honeycrisp or Granny smith
1/3cuptoasted chopped walnuts*
1/4cupraisins
Instructions
Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper. Set aside.
In a large bowl, combine the almond butter, applesauce, maple syrup, egg, and vanilla extract. Whisk until smooth.
Add the oat flour, baking soda, salt, cinnamon, cloves, and nutmeg. Stir until just combined. Stir in the oats, grated apple, walnuts, and raisins.
Scoop the dough onto prepared baking sheet, about 2 tablespoons per cookie.
Bake the cookies for 10 to 12 minutes or until they’re set, but still soft.
Remove the cookies from the oven and cool on the baking sheet for 5 minutes and then transfer to a cooling rack to cool completely.

How to Make Oat Flour: It’s easy to make oat flour. Just put 1 cup of old-fashioned rolled oats in a blender and blend until the oats resemble flour. It should take about 30 seconds.How to Toast Walnuts: I like to quickly toast the walnuts to bring out the best flavor. Place them in a dry skillet over medium heat. Stir often and cook for 5–7 minutes, until fragrant and lightly golden. Remove from the pan right away to cool, they can burn quickly!Chocolate Chips: Add in a handful of chocolate chips for a little decadence. How to Store: Store in an airtight container on the counter for up to 4 days. Freeze in a single layer in an airtight container or bag for up to 3 months. They are good frozen or you can thaw before enjoying.
