Ingredients

For the oats:

  • 1 cup old fashioned oats, can use gluten-free oats
  • 1 cup unsweetened vanilla almond milk, or milk of your choice
  • 1/2 cup plain Greek yogurt, can use vegan yogurt
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons pure maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of sea salt

For the apple topping:

  • 1 tablespoon salted butter
  • 1 large Honeycrisp apple, chopped
  • 2 teaspoons pure maple syrup
  • 1/2 teaspoon ground cinnamon

Optional toppings:

  • Chopped pecans or walnuts
  • Pepitas
  • Drizzle of peanut butter or almond butter
  • Dried cranberries or raisins

Instructions

  • Make the Oats. In a medium bowl or jar, combine the oats, milk, Greek yogurt, applesauce, maple syrup, chia seeds, vanilla, cinnamon, and sea salt. Stir until well combined. Set aside while you make the cinnamon apples.
  • Cook the Apples. Melt the butter in a small skillet over medium heat. Add the chopped apple, maple syrup, and cinnamon. Cook for 4 to 6 minutes, stirring occasionally, until the apples are tender and lightly caramelized. Let the apples cool slightly.
  • Assemble and Chill: Divide the oat mixture between two jars or bowls. Spoon the cinnamon apples over the top. Cover and refrigerate overnight, or for at least 4 hours, until the oats have thickened. Add any optional toppings just before serving.

Notes

  • Old-fashioned rolled oats give the best texture; quick oats may become mushy.
  • Use certified gluten-free oats for a gluten-free version.
  • Use dairy-free yogurt, milk, and butter to make the recipe vegan.
  • If the oats are too thick after chilling, stir in a splash of milk.
  • For meal prep, store the cinnamon apples separately and add them just before serving.
  • Refrigerate in airtight containers for up to 4 days.
