For the salad: 5 oz arugula 2 cups cooked farro 3 medium ripe peaches, pitted and sliced 1 cup blackberries 1 cup diced cucumber 1 avocado, chopped 1/2 cup feta cheese or goat cheese 1/2 cup chopped pecans or almonds 1/4 cup thinly sliced red onion 2 tablespoons chopped mint 2 tablespoons chopped basil For the dressing: 1/3 cup olive oil or avocado oil Zest of 1 lime 2 tablespoons lime juice 2 tablespoons honey 1 tablespoon red wine vinegar 1 small shallot, minced 1 clove garlic, minced Kosher salt and pepper, to taste
In a large bowl or on a large platter, combine the arugula, cooked farro, peaches, blackberries, cucumber, avocado, cheese, nuts, onion, and herbs.
In a small bowl or in a glass jar, whisk together the oil, lime zest, lime juice, honey, red wine vinegar, shallot, garlic, salt, and pepper.
Pour the dressing over the salad and gently toss together until the salad is well coated. Serve.
