For the Cowboy Caviar:
15ozblack beans,rinsed and drained
15ozblack eyed peas,rinsed and drained
4Roma tomatoes seeds removed,diced
1red bell pepper,diced
1yellow bell pepper,diced
1cupsweet corn
1/2cupred onion,diced
1jalapeño pepper seeds removed,diced into very small pieces
1/3cupchopped cilantro
2avocados,pitted and diced*
2tablespoonslime juice
Tortilla chips,for serving
For the Dressing:
1/3cupolive oil or avocado oil
2tablespoonsred wine vinegar
1clovegarlic,minced
1teaspoonhoney
Kosher salt and black pepper,to taste
Instructions
In a large bowl, combine the beans, black eyed peas, tomatoes, peppers, corn, onion, jalapeño, and cilantro. Gently fold in the avocado and add the fresh lime juice.
In a small bowl, whisk together oil, red wine vinegar, garlic, honey, salt, and pepper.
Pour the dressing over cowboy caviar and stir until well combined.
Serve immediately or cover and refrigerate for 30 minutes so the flavors can marinate. Enjoy with tortilla chips!

Fresh lime juice really brightens the flavors, so don’t skip it.
