Ingredients
2lbs.boneless skinless chicken thighs*
1/4cupfresh lime juice
3tablespoonshoney
3garlic cloves,minced
2tablespoonsavocado oil or olive oil
1teaspoonsmoked paprika
1teaspoonkosher salt
1/2teaspoonground cumin
1/4teaspooncrushed red pepper flakes
Instructions
In a large bowl, whisk together the lime juice, honey, garlic, oil, smoked paprika, cumin, salt and crushed red pepper flakes.
Add the chicken thighs and toss until well coated. Cover and marinate for 1 hour or up to 24 hours.
Preheat the grill or grill pan to medium-high heat. Add chicken thighs and cook 5-7 minutes per side or until chicken reaches 165°F. Rest 5 minutes before serving.
Notes
If you want to use bone-in, skin-on chicken thighs, you can, they will take a little longer to cook. You can also use chicken breasts for this recipe.How to Store:
Refrigerate leftovers in an airtight container for up to 4 days.
Reheat in a skillet over medium-low heat or microwave in short bursts to avoid drying it out.
Freeze cooked chicken for up to 2 months. Thaw in the fridge overnight and reheat as needed.
