Ingredients
For the oats:
1large peach,pit removed and chopped
3/4cupmilk
3/4cupcottage cheese,can use Greek yogurt
1scoop vanilla protein powder
1/2teaspoonground cinnamon
Pinchof flaky sea salt
1tablespoonchia seeds
2teaspoonspure maple syrup
1teaspoonpure vanilla extract
1cupold-fashioned rolled oats
For the toppings:
Chopped peaches
Cinnamon
Granola or chopped pecans or almonds
Instructions
Blend the base. Add the peach, milk, cottage cheese, protein powder, cinnamon, flaky sea salt, chia seeds, maple syrup, and vanilla to a blender. Blend until smooth and creamy.
Add the oats. Pour the mixture into a jar or bowl. Stir in the rolled oats until well combined.
Chill. Cover and refrigerate for at least 4 hours or overnight, until the oats are soft and thick.
Serve. Stir well before serving. Top with fresh peaches, an extra sprinkle of cinnamon, granola, or chopped nuts, if desired. Enjoy!
Notes
Old-fashioned rolled oats create the best texture.
Greek yogurt can be substituted for the cottage cheese.
Use a ripe peach for maximum sweetness and flavor.
Refrigerate at least 4 hours, preferably overnight.
Add a splash of milk before serving if the oats become too thick.
Store in the refrigerator for up to 4 days.
