Ingredients
1cuppumpkin puree
1/2cupnatural creamy almond butter
1/2cuppure maple syrup
1large egg
2teaspoonspure vanilla extract
2 1/4cupsold-fashioned oats
2teaspoonspumpkin pie spice
1/4teaspoonground cinnamon
1/2teaspoonbaking powder
1/4teaspoonkosher salt
1/2cupchocolate chips,plus 2 tablespoons for sprinkling on top
Flaky sea salt,for sprinkling on top
Instructions
Preheat oven to 350 degrees F. Line an 8×8-inch metal baking pan with parchment paper. Lightly spray with nonstick cooking spray and set aside.
In a large bowl, combine the pumpkin, almond butter, maple syrup, egg, and vanilla extract.
Add the oats, pumpkin pie spice, cinnamon, baking powder, salt, and 1/2 cup chocolate chips. Stir until combined.
Pour the mixture evenly into the prepared pan. Top with remaining chocolate chips.
Bake for 30 to 40 minutes or until set and the bars are slightly golden brown around the edges. Remove from the oven and sprinkle with flaky sea salt. Let cool in the pan before cutting. When cool, cut into squares and serve.

Room Temperature: Store in an airtight container for up to 2 days.
Fridge: Keeps well for up to 1 week, just let them come to room temp or microwave for 10-15 seconds before enjoying.
Freezer: Freeze individually wrapped bars for up to 3 months. Enjoy frozen or thaw. You can also heat them up in the microwave for a gooey pumpkin treat!
