Berry Granola

Easy homemade berry bunny granola with fun bunny shapes for kids! It is great with milk, yogurt, or eaten by the handful.

  • 2 cups old fashioned oats
  • 3/4  cup flaked coconut
  • 1 cup chopped almonds
  • tablespoon coconut sugar or brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil
  • 1/3 cup pure maple syrup
  • 1 1/2 teaspoons pure vanilla extract
  • 1 cup Annie's Organic Berry Bunnies Cereal
  • 3/4 cup freeze dried berries I use a mix of strawberries, blueberries, and raspberries

  • Preheat oven to 325 degrees F. Line a large baking sheet with a Slipat or parchment paper. Set aside.
  • In a large bowl, combine oats, coconut, almonds, sugar, cinnamon, and salt.
  • In a small saucepan, heat the coconut oil and maple syrup over medium heat, whisking frequently. When combined, about 2 minutes, remove from heat and whisk in the vanilla extract.
  • Pour the liquid mixture over the oat mixture and stir until well coated. Spread onto prepared baking sheet in an even layer.
  • Bake for 25-30 minutes or until granola is golden brown, stirring every 10 minutes. Let granola cool. Stir in the Annie's Berry Bunnies Cereal and the freeze dried berries. Serve! The granola will keep in an air-tight container for up to 1 month.
  • Note-if you like clumpy granola, don't stir the granola while it is in the oven and let it cool completely before removing from pan. It will harden as it cools.
