Cucumber Noodle, Watermelon, and Feta Salad

This cool and refreshing salad is a great side for any summer meal.

  • 1 large seedless English cucumber
  • 3 cups cubed watermelon, 1/2-inch pieces
  • 1/3 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves,  thinly sliced
  • Juice of 1 lime


  • Use an Inspiralizer to create the cucumber noodles. Place noodles in a large bowl. Add the watermelon cubes, feta cheese, and mint. Squeeze fresh lime juice over the salad. Serve immediately.
