Ingredients
3tablespoonsplain Greek yogurt
3tablespoonsmayonnaise
1tablespoonlemon juice
1tablespoonhoney,can use pure maple syrup
1/2teaspoonkosher salt
2cupsdiced apples*
1cuphalved red grapes
1cupdiced celery
1cuptoasted pecans,roughly chopped
1tablespoonfinely chopped parsley
Boston lettuce,for serving, optional
Instructions
In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, honey, and salt. Stir until well combined. Set aside.
In a large bowl, add the apples, grapes, celery, pecans, and parsley.
Add the dressing and stir until well coated. Serve plain or in lettuce cups.
Notes
You will need 2 large or 3 medium apples. I like to use Granny smith or Honeycrisp apples.Store the salad in an airtight container in the fridge for up to 3 days.
