Ingredients

  • 3 cups diced watermelon
  • 1 cup diced mango
  • 1 cup diced cucumber
  • 1/4 cup diced red onion
  • 1 small jalapeño, seeds removed and diced
  • 1/4 cup chopped cilantro
  • 2 tablespoons chopped mint
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon lime zest
  • Kosher salt, to taste

Instructions

  • In a medium bowl, add the watermelon, mango, cucumber, red onion, jalapeño, cilantro, mint, lime juice, lime zest, and salt.
  • Stir gently until well combined.
  • Serve with tortilla chips or spoon over grilled chicken, fish, or tacos.

Notes

How to Store: This salsa is best the day it is made, but you can store any leftovers in an airtight container in the fridge for up to 2 days. Just keep in mind, the watermelon will release juice as it sits, so give it a quick stir before serving again.
