A Crunchy Kale Salad with the Best Lemon Pistachio Dressing

I love a good kale salad, but it has to have texture and plenty of flavor. Nobody wants to sit down to a giant bowl of tough kale with a boring dressing. This crunchy kale salad is anything but boring!

The combination of finely chopped lacinato kale and green cabbage gives the salad a really good crunch, while Parmesan, green onions, and fresh mint add plenty of flavor. But the real star is the creamy lemon pistachio dressing. It is bright, lemony, slightly sweet, and made with roasted salted pistachios, which gives it an incredible richness without being heavy.

And then we add pistachio panko breadcrumbs. They are golden, salty, nutty, and crunchy, and they make every bite extra special. I highly recommend making the full batch because you’ll want that crunch in every forkful.

This is one of those salads that feels fresh and vibrant but is still incredibly satisfying. I love serving it alongside dinner, especially with grilled chicken, salmon, or roasted vegetables. It is also a great salad to bring to a potluck or dinner party because the hearty kale and cabbage hold up much better than delicate greens.

For the Creamy Lemon Pistachio Dressing

  • Roasted salted pistachios: These give the dressing its creamy texture and delicious nutty flavor. I like using roasted and salted for the most flavor.
  • Fresh lemon juice: Use freshly squeezed lemon juice for the brightest flavor.
  • Apple cider vinegar: Adds a little extra acidity and keeps the dressing from tasting too rich.
  • Honey: Just enough to balance the tart lemon and vinegar.
  • Garlic: A small clove adds savory flavor without overpowering the pistachios.
  • Olive oil: Slowly stream it in while blending so the dressing becomes creamy and emulsified.

For the Pistachio Panko

  • Pistachios: Finely chop them so they toast evenly and give you plenty of crunch.
  • Panko breadcrumbs: Regular breadcrumbs won’t give you quite the same light, crispy texture.
  • Olive oil: Helps everything toast and turn golden.
  • Garlic powder: Adds another little layer of savory flavor.

For the Salad

  • Lacinato kale: Also called Tuscan kale or dinosaur kale. Its sturdy leaves are perfect for salads.
  • Green cabbage: This is key for the crunch! Slice or chop it very finely so it blends nicely with the kale.
  • Parmesan cheese: Freshly grated Parmesan adds salty, savory flavor.
  • Green onions: Their mild onion flavor works beautifully with the lemon dressing.
  • Fresh mint: Don’t skip it! The mint adds a fresh pop that makes the salad taste especially bright.

Tips for Making the Salad

Finely chop the kale. For the best texture, chop the kale into small, bite-sized pieces. Remove the tough ribs first, then finely chop the leaves.

Don’t skip the cabbage. The cabbage is what gives this salad so much crunch. I love the combination of tender kale and crisp cabbage.

Blend the dressing until creamy. Let the pistachios blend with the lemon juice and other ingredients before slowly streaming in the olive oil. This creates a smooth, creamy dressing.

Taste the dressing before adding it to the salad. Depending on the saltiness of your pistachios and the tartness of your lemons, you may want a little more honey, lemon juice, salt, or pepper.

Keep an eye on the pistachio panko. It only takes a few minutes to toast, and it can go from golden to burned quickly. Stir frequently and remove it from the heat as soon as it’s nicely toasted.

Let the panko cool. Give the pistachio panko a few minutes to cool before adding it to the salad so it stays crisp.

Don’t add all of the dressing at once. Start with some dressing, toss, and add more as needed. You want the kale and cabbage coated but not swimming in dressing.

Save some crunch for the top. I like mixing half of the pistachio panko into the salad and saving the rest for the top. That way you get crunch throughout and an extra crispy bite on top.

How to Store

This salad is a great make-ahead option because kale and cabbage are sturdy greens that don’t wilt as quickly as lettuce.

  • Store the salad and dressing separately if you aren’t serving it right away. Keep the pistachio panko in an airtight container at room temperature so it stays crunchy.
  • If the salad has already been dressed, store it covered in the refrigerator for up to 2 days. The kale and cabbage will soften a little, but the salad will still be delicious. For the best texture, add the pistachio panko just before serving.
  • The dressing can be refrigerated separately for up to 5 days. Give it a good shake or stir before using.

Ingredients
  

For the creamy lemon pistachio dressing:

  • 1/2 cup roasted salted pistachios
  • 1/4 cup fresh lemon juice
  • 1/4 cup water
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 clove garlic
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil

For the pistachio panko breadcumbs:

  • 1/2 tablespoon olive oil
  • 1/3 cup chopped pistachios
  • 1/3 cup panko
  • 1/8 teaspoon garlic powder
  • Kosher salt, to taste

For the salad:

  • 4 cups finely chopped lacinato kale
  • 4 cups finely chopped green cabbage
  • 1/2 cup freshly grated Parmesan cheese
  • 2 green onions, chopped
  • 2 tablespoons finely chopped fresh mint

Instructions
 

  • Make the Dressing. In a blender or food processor, combine the pistachios, lemon juice, water, apple cider vinegar, honey, garlic, salt, and pepper. Blend until smooth. With the blender running, slowly stream in the olive oil until the dressing is creamy and emulsified. Set aside.
  • Make the Pistachio Panko. Heat the olive oil in a small skillet over medium heat. Add the chopped pistachios, panko, and garlic powder. Cook, stirring frequently, until golden brown and toasted. Season with a pinch of salt and let cool.
  • Prep the Salad Base. In a large bowl, add the kale and cabbage. Toss well to combine.
  • Assemble the Salad. Add the Parmesan cheese, green onions, and fresh mint. Add half of the pistachio panko breadcrumbs. Drizzle with the desired amount of dressing and toss until well coated.
  • Finish & Serve. Top with the remaining pistachio panko breadcrumbs and serve.

Notes

  • Kale: Lacinato kale, also called Tuscan or dinosaur kale, works best here, but curly kale can be used.
  • Pistachios: Use roasted salted pistachios for the best flavor. If using unsalted pistachios, add additional salt to the dressing and panko as needed.
  • Dressing: You may not need all of the dressing. Add it gradually until the salad is dressed to your liking.
  • Panko: Watch the pistachio panko closely while toasting so it doesn’t burn.
  • Make ahead: The dressing and pistachio panko can be made ahead. Store separately and assemble the salad just before serving.
  • Serving: The recipe makes a generous salad for 8 as a side dish.
