Sweet Potatoes

Baked sweet potatoes filled with black beans, veggies, enchilada sauce, and lots of delicious toppings! This easy vegetarian meal is satisfying and a family favorite!


Start by baking the sweet potatoes.


Meanwhile, make the filling and set aside.


Cut the baked sweet potatoes in half lengthwise and smash them down. Pour some of the enchilada sauce onto each sweet potato half.


Spoon the filling over the top and sprinkle with cheese. Then, bake and serve with your favorite toppings.
