Spring Rolls

with Peanut Sauce

Fresh spring rolls-colorful vegetables, rice noodles, and herbs wrapped in rice paper. Serve with peanut sauce on the side for dunking the rolls. Enjoy as an appetizer, snack, or light meal.

Make the peanut sauce first, then set aside.


Let the rice paper soften in water, then remove it to a dish towel.


Lay a piece of lettuce over the bottom third of the rice paper, followed by rice noodles, peppers, cucumber, carrot, cabbage, avocado, and herb leaves.


Fold the rice paper and roll. Serve the spring rolls with peanut dipping sauce.
