Ingredients

For the burgers:

  • 1 pound ground turkey
  • 1/2 cup fresh spinach leaves, finely chopped
  • 1/2 cup shredded zucchini, excess moisture squeezed out
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed pepper flakes
  • Olive oil or avocado oil, for grilling

For serving:

  • 4 hamburger buns, toasted
  • Tzatziki sauce
  • Lettuce
  • Tomato slices
  • Red onion slices

Instructions

  • In a large bowl, add the ground turkey, spinach, zucchini, feta, red onion, parsley, lemon zest, garlic powder, oregano, salt, pepper, and crushed red pepper flakes. Mix with your hands to combine.
  • Form the mixture into four 1/2-inch-thick patties.
  • Preheat the grill (or grill pan) to medium heat and brush with oil. Grill the burgers until cooked through, about 5 to 6 minutes per side. A turkey burger is fully cooked when the center of the patty reaches an internal temperature of 165° F.
  • Place the burgers on the toasted buns and top with tzatziki, lettuce, tomato, and red onion. Serve immediately.

Notes

How to Store:
Refrigerate: Store cooked burgers in an airtight container in the fridge for up to 4 days.
Freeze: Wrap patties individually in parchment paper, then place in a freezer bag. Thaw overnight in the fridge before reheating.
Reheat: Warm gently in a skillet over medium heat or in the oven or air fryer at 350°F until heated through. Avoid microwaving if you want to preserve the juicy texture.
