Apple Coffee Crumb Cake with Brown Sugar Glaze
We aren’t traveling for Christmas this year because my family is coming to us. Yay! We are already counting down the days. Everyone will be at our house on Christmas morning for brunch and to see what Santa left them under the tree:) I am starting to plan the Christmas brunch menu and I think this Apple Coffee Crumb Cake with Brown Sugar Glaze will have to make an appearance. It is easy to make, I bet you have all of the ingredients in your pantry right now, and it is a real crowd pleaser. The best kind of cake!
I love that coffee cake is acceptable for breakfast and brunch. Starting your day with dessert is always a good idea, especially on a holiday:) This cake is loaded with apple chunks so it is somewhat healthy, right?
I love anything with a crumb or streusel topping and this cake has a thick crumb topping made of butter, brown sugar, and cinnamon. The flavors go perfectly with the moist apple cake.
The cake is wonderful with just the crumb topping, but why stop there? It also has a brown sugar glaze, which makes the cake extra special. I like to drizzle each piece with the glaze, right before serving. I can’t wait until Christmas to see my family…and to eat this cake. It is going to be a wonderful addition to our Christmas morning brunch.
Apple Coffee Crumb Cake with Brown Sugar Glaze
Yield: 12-16 servings
Cook Time: 45 minutes
Ingredients:
1/2 cup unsalted butter, at room temperature
1 1/2 cups packed light brown sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped applesCrumble Topping:
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softenedBrown Sugar Glaze:
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons waterDirections:
1. Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish and set aside.
2. In a large bowl, cream together butter and brown sugar until light and fluffy. Add the eggs one at a time, beating after the addition of each. In a separate bowl, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
3. To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
4. To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Cut into squares and serve.

This looks heavenly. Christmas is coming to us this year too. I love everything about this!
Looks yummy! Ah, dessert for breakfast. Just make it with whole wheat flour and it’s practically Shredded Wheat!
Hi, this looks awesome. A couple questions about the apples: 1) what variety can I use (sweet/tart/combination) and 2) how fine of a chop for this recipe? Thank you!
I’m positive I could eat the entire batch myself! I’ll be seriously depressed when the good apples aren’t available again ’till next Fall!!
Apple Coffee Cake is always delicious – but the brown sugar glaze, takes this recipe to an other level! What a great recipe and completely healthy (because of the apples) in my books
WOW… these look amazing!!! Can I come over for Christmas brunch, too?
What a delicious coffee cake! Perfect for Christmas brunch.
Um, I’ll have a wee bit of cake with a big bowl of that sauce. Actually, I’ll take a big bowl of both!

apples and brown sugar are a great combo
This looks magically delicious!
I made this exact recipe last night for a guy in the department next to mine at work! It got rave reviews!!!! It was soooo easy to make & the batter was super delish! I usually just take a tiny swipe off the beater and pass them off to hubby…not last night….I licked one clean! I never do that! I didn’t taste the actual cake, but everyone who did loved it! I will, for sure, make this one over & over! I didn’t change a thing!
I can’t think of a happier moment all year than lounging in my pj’s and enjoying Christmas brunch! This dish sounds like a wonderful recipe for the occasion!
