Vegetable Lime Chickpea Chili {Picky Palate Cookbook Giveaway}
Last week packed up our mini-van and drove to Illinois to visit my family. Josh helped my dad with a home renovation project while I spent most of my time in the kitchen. I was much more useful in the kitchen. I don’t do so well with sheetrock, sanding, and painting. I don’t think the guys minded because every time they came into the kitchen they had something yummy to sample.
One night, we had family and friends over for a soup and chili party. I made Vegetable Lime Chickpea Chili from our good friend Jenny’s new cookbook, The Picky Palate Cookbook. When I saw this chili recipe in Jenny’s book, I immediately bookmarked it. I love a chili that is packed with vegetables. Plus, this recipe has chickpeas, cilantro, and lime-all of my favorites.
This chili can be made in about 30 minutes, which makes it perfect for a weeknight meal. All of the ingredients get tossed into one large pot so there isn’t a lot of clean-up. I also love this recipe because it is vegan, gluten-free, and vegetarian-which makes it perfect for serving a crowd. And if you are a meat lover, I promise you won’t miss the meat. This chili is full of flavor and very satisfying. And the kiddos will love all of the colorful vegetables. Caleb devoured his bowl of chili.
Everyone at the party loved the Vegetable Lime Chickpea Chili. It was actually the first thing to go! We are going to make this chili all winter long. It’s already a family favorite. Thanks Jenny for the fabulous recipe!

Vegetable Lime Chickpea Chili
Yield: 6-8 servings
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
An easy, healthy, and flavorful chili the entire family will love!
Ingredients:
2 tablespoons extra-virgin olive oil
1 1/2 cups finely chopped white onion
1 1/2 cups chopped zucchini
1 1/2 cups yellow squash
1 cup chopped mini sweet peppers
1 8-ounce package baby bella mushrooms, sliced
2 tablespoons minced garlic
2 15-ounce cans chickpeas, drained and rinsed
1 28-ounce can diced tomatoes
2 cups vegetable broth
1/2 cup chopped fresh cilantro leaves
3 tablespoons lime juice
2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepperDirections:
1. Heat the olive oil in a Dutch oven or large pot over medium heat. Add the onion, zucchini, yellow squash, sweet peppers, and baby bells and cook, stirring, until tender, 5-8 minutes. Add the garlic and cook, stirring, for 1 minute. Add the chickpeas, tomatoes, broth, cilantro, lime juice, cumin, chili powder, salt, and pepper, stir to combine and cook until hot, about 5 minutes. Reduce the heat to low and simmer until ready to serve.

Favorite weeknight meal is a big salad, tons of fresh seasonal veggies on top, with tofu or tempeh and homemade salad dressing. Easy but I never get sick of it – and it’s fast!

My favorite weeknight meal is ginger chicken – it’s a crockpot recipe that takes about 10 minutes to throw in in the morning and then it’s ready by dinner time!
Favourite week night meal would have to be seared salmon and a creative salad to go with! Yummo!

I know this is going to sound crazy, but this time of year, I love to eat a warm bowl of apple cinnamon oatmeal for dinner. But my favorite (fall) weeknight dinner to MAKE for my family is a delectable butternut squash and caramelized onion galette. It’s always a hit, and smells divine coming out of the oven. Right now its thai chicken curry in the crockpot. It makes the house smell great and there is always a ton left for lunches!
Our favorite weeknight meal is called “Pasta Mama” – it’s a dish with pasta, egg, garlic and parmesan cheese. It’s really quick to make, we add some veggies and I don’t feel as bad about eating pasta for dinner because at least we’re getting some protein from the egg!
My favorite weeknight meal would be a baked vegetable lasagne. Last night I made it with black olives, mushrooms, and steamed spinach. It was a hit!
Chicken Fried Rice. I almost always have the ingredients on hand and everyone loves it.
My favorite weeknight meal lately has been baked falafel served with plenty of lettuce, tomato, feta, and whatever other veggies we have around. Easy, fast, delicious and wholesome!
In the summer, a sald with lots of veggies and my home made lemon chili pepper dressing. In the winter, soups and chilis.

My favorite weeknight meal is chicken fajitas! I must have them at least twice a week! I love adding left over veggies with chicken, hot sauce and greek yogurt! Yum!! Or even vegetarian tacos/burritos with black beans!! Ok, it’s 4:30 am and now I want tacos! Ohh, and egg burritos!
Our current favorite weeknight meal is probably chicken enchilada spaghetti. It’s one of my husband’s most requested meals
My favorite weeknight meal is pasta with meatballs. I make a homemade marinara sauce that everyone loves. And with meatballs, Parmesan cheese, a green salad and a glass of red wine–I’m happy! Especially if someone else cleans up.

Enchiladas! I make them Sunday night and can eat then all week long. They are light enough for lunch and filling. Make a great supper too.

During the fall and winter months, my favorite weeknight meal is taco soup. It’s super easy to make and so yummy!
Salmon is always a favorite! It’s so easy to cook and is ready in no time, great after a long day of work!
Our favorite weekday meal is baked chicken and mashed potatoes with steamed vegetables. My girls love mashed potatoes and steamed vegetables and could have them at every meal!
What a fun chili! I’m always up for new mix ups on chili. And you know my Josh loves lime so I know he could get behind this!
