I have to get my glucose test today. I had a tough time getting all of that nasty orange drink down when I was pregnant with Caleb so I am dreading it. I doubt this time will be any easier. Why can’t someone invent a magic pill to swallow? They would be a millionaire! I don’t think any pregnant woman looks forward to this test. There has to be a better way. Can someone please work on a magic pill and do it fast because my test is today:)

Or why can’t I just eat a dozen Butterscotch, Toffee, and Chocolate Chip Cookies? I could easily down a dozen of these cookies! They taste much better than the dreaded orange sugary drink:)

The cookies are soft and chewy with a crisp buttery edge! The butterscotch, toffee, and chocolate combo will make your mouth and belly sing with joy! I’ve made these cookies a few times and I can never stop at just one. They are just too good!

If I don’t pass my glucose test, I don’t know how I will give up sugar. I NEED cookies in my life, especially Butterscotch, Toffee, and Chocolate Chip Cookies. I am in love with these cookies!

Let’s hope I pass my test with flying colors. If I do, you better believe I am celebrating with a batch of Butterscotch, Toffee, and Chocolate Chip Cookies. Wish me luck!

Butterscotch, Toffee, Chocolate Chip Cookies

Soft, chewy, and buttery cookies with butterscotch chips, toffee, and chocolate chips! We love everything about these cookies!

  • Preheat oven to 350 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper. Set aside.
  • In a large bowl, whisk together flour, sea salt, baking soda, and baking powder. Set aside.
  • In the bowl of a stand mixer, cream butter and sugars together until light and creamy, about 5 minutes. Add the eggs and vanilla extract. Beat for an additional 2 minutes.
  • Slowly add the dry ingredients to the wet ingredients. I add ½ cup at a time. Mix until flour is just combined. Stir in the chocolate chips, butterscotch chips, and Heath Toffee Bits.
  • Drop about 2 tablespoons of dough onto prepared baking sheet, placing the cookies 2-inches apart. Bake for 12 minutes or until the edges are slightly golden brown. Remove from oven and allow the cookies to cool on the baking sheet for 2-3 minutes. Transfer cookies to a wire cooling rack and cool completely.

  17. I passed that test the first time, but not the 2nd. Good luck. If you don’t pass this test, they make you come in fasting and have to drink the sugary drink again and get your blood tested a few times over the next 3 hours. That wasn’t good, either.

  28. These are AMAZINGLY awesome cookies!!!!! I put a scoop of softened vanilla ice cream in between 2, wrapped in Saran Wrap & placed in freezer to firm them up a bit….served as a dessert to my family – they loved it!!! Yummy for ice cream sandwiches:)

  29. Just came across this recipe through pinterest but I feel compelled to comment because of your distaste for the orange drink/glucose test. Obviously, as it is July and this was posted in May you are already done… but for future reference… I have had two pregnancies and have NEVER drank the orange drink. I told my OB/GYN there was no way I could drink it, that I can’t even drink orange juice. I do not like citrus. So, he did some studying and found that you can eat jelly beans instead. Yes, jelly beans. It has to be a certain kind… which I forget since my youngest is now 5… but you can have maybe 17 jelly beans and it is the same as drinking the orange drink. I HIGHLY recommend it!!!

  31. I know this thread is old, but just FYI for everyone- you DO NOT have to drink that orange drink. I did once and got sick, and with my 3 other pregnancies the doctor let me do it with a regular size Snickers bar. Exactly the same amount of sugar for the rest. I also have friends who were allowed jelly beans.

    These cookies look absolutely amazing! Just wondering if I can sub Kosher salt for the sea salt. I really dislike sea salt and don’t want to buy an entire container of it for just one recipe…of course, the more I stare at these pictures, the more it seems like it’s worth it…. 🙂

  35. I am not a toffee fan. Can I substitute another type of chip? Or add more butterscotch chips? I make several of your cookie recipes! Thanks for your great cookie recipes

    1. Sure, you can leave out the toffee. You can add in more chocolate chips or butterscotch chips or just leave the toffee out. It just depends on how chocolaty you want the cookies. Start with the recommended amount and add more if you want:)

    Soooooo delicious and easy to make! The only bad thing is that they’re way too easy to eat! I suggest doubling the recipe if you want the batch to last for more than a day or two 🙂
