We have a few favorite slow cooker recipes, like our Butternut Squash Soup, but we don’t use it as much as we should. I am determined to change that this year. 2015 is going to be the year of the slow cooker at our house. It is officially invited to hangout in our kitchen on a regular basis. Our counter has a VIP parking place for our slow cooker:)

I love this recipe because the prep is easy and the slow cooker does all of the work. You don’t have to cook anything first, just dump all of the ingredients into the slow cooker!

Another reason I love this chili, the ingredients are basic and I bet you have most of them on hand. Our Smith’s (Kroger) had a case lot sale at the beginning of the year and we stocked up on diced tomatoes, black beans, red beans, and vegetable broth. We can make this chili all winter long! Yay! I love Kroger’s line of products because they are high quality and don’t break the bank!

We are trying to eat more veggies at our house this year, it is one of our Little Victories, so I added sweet potatoes and peppers to the chili! I love the boost of color, flavor, and nutrition they add!

I cooked the chili on high in our slow cooker and it took a little over five hours. I love that our slow cooker made us dinner while I did absolutely nothing. Well, I entertained two boys all day so by the time dinner rolled around I was exhausted and so glad I didn’t have to cook dinner! I am really loving this slow cooker thing!

  1. Hi, Maria! We LOVE chili, and after we devoured your healthy turkey chili not long ago, and I think that we MUST give this recipe a try. Looks delicious, and I agree – healthy, easy recipes are the best kind! 🙂

    Pinned!

I hope that you have a great week and that you are staying warm.

  2. MAKING! But I think I’m going to use Butternut squash instead of sweet potato (Josh claims to not like sweet potatoes ;)). So yum!

  3. I’ve been making a recipe like this for years but it also includes some fruit: diced pineapple and granny smith Apple. You should give it a try!

  4. this was absolutely delicious!!! and so so so easy. I didn’t have time to put it in my slow cooker so cooked it on the stovetop. I will definitely be making again and again.

  5. Just couldn’t resist making this today as I bought a full bag of 8 large sweet potatoes a few days ago, on sale for $2.00. It is smelling fabulous, whole house smells inviting!!!!

  6. I made this in my slow cooker overnight last night. When my little “peas” woke up they couldn’t believe how good the house smelled. And frankly neither could I. Can’t wait to get home to dinner tonight.

Omg! Thank you SO much! I made this at home and it was delicious! A lot of other vegan chili recipes seem very complicated. This one is easy peasy and SO worth it. It also was VERY inexpensive and will last a few days
