Soft Gingersnaps with White Chocolate Cream Cheese Frosting

Soft gingersnap cookies with white chocolate cream cheese frosting. These cookies are a holiday favorite!

Prep Time
10 minutes
Servings
16 cookies

Ingredients

  • For the gingersnaps:
  • 2 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 ⁄4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 ⁄2 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 3 ⁄4 cup unsalted butter at room temperature
  • 1 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ⁄4 cup molasses
  • For the frosting:
  • 4 ounces cream cheese at room temperature
  • 4 tablespoons unsalted butter at room temperature
  • 3 ounces white chocolate chopped and melted
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar

Instructions

  1. 1. Preheat oven to 375 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper. Set aside.
  2. 2. In a large bowl, whisk together the flour, baking powder, salt, and spices.
  3. 3. In the bowl of a stand mixer, beat the butter and brown sugar until smooth and creamy, about 3 minutes. Add in the egg and vanilla extract. Mix until well combined. Add in the molasses and mix until combined.
  4. 4. With the mixer on low, slowly add the flour mixture. Mix until flour disappears.
  5. 5. Form the dough into tablespoon sized balls. Place the cookie dough balls on prepared baking sheet, about 2 inches apart.
  6. 6. Bake for 10-12 minutes or until cookies are set, but centers are still soft. Let the cookies cool on the baking sheet for two minutes, then transfer to a wire cooling rack to cool completely.
  7. 7. While the cookies are cooling, make the frosting. In the bowl of a stand mixer, cream the cream cheese and butter on medium-high speed until smooth. Add the melted white chocolate and vanilla extract. Beat until smooth. Reduce the mixer speed to low and add the powdered sugar until smooth.
  8. 8. Using a knife, frost the gingersnaps with frosting.

  1. I purchased the ipad version of the Holiday edition and realized after I paid for it that I don’t get any of the extras. Can you email them to me?

  2. Was this shot in two kitchens or did you get carerra marble counters after your kitchen remodel? I LOVE your kitchen. Its one of my inspirations when we redo the one in the the house we are buying – same colors too. I have the same mixers as you and I adore the subway tile and swoon over that pot filler! Its the little things right that make for a happy baker/cook!!

Oh yes going to go buy the holiday cookie book now!
Looks amazing you two did a great job and Caleb is adorable!

  3. Congrats Maria! Your cookie cravings book and the holiday addition are amazing. I jumped at the opportunity this morning. I LOVE everything about the books and can’t wait to get into the kitchen! I have a similar chocolate covered pretzel cookie like yours and seeing yours make me want to make them again for the holidays. 🙂 Wonderful job! I loved the video as well! So enjoyable to see you at work in the kitchen.

  4. Hi there! Thanks for the wonderful deal! I just bought the digital package, but I didn’t receive an email or instructions on how to actually get it. Please advise…I am anxious to see the yummy recipes! 🙂

  5. i purchased the cookbook (options 1, 3, & 4) through paypal. paypal had an old email address—are the books going to be emailed? i’m concerned they will be emailed to the wrong address.

    thanks for your help!!

  6. Congratulations and thanks for the great deal on your new cookie book 🙂 I’m excited to try some new recipes for the holidays. I can’t decide if the eggnog cookies or chocolate covered pretzel cookies will be first on my list!

  7. downloaded the but I can’t find it. Was this not downloadable to a computer and just an ereader, if so I wish that would have been stated cleared then I would have kept my money.

  8. I so wanted this cookbook but have tried 3 times downloading and it WILL NOT OPEN! I have the latest Adobe but it keeps saying the file cannot be uncoded. Anyone else have an issue? Suggestions?

  9. The only thing I purchased for black friday OR cyber monday! I bought both books on my I-pad and then it let me purchase the add-on through the email link on my laptop- best of both worlds! I really wanted those printable tags 🙂 🙂

  10. So, I made the soft Gingersnaps today – gluten free, because that’s what my family needs. I didn’t change anything about the recipe besides using a mixture of gluten free flours and I beat it a little extra (gluten free stuff needs that sometimes because it doesn’t have the gluten to help it out). They turned out AMAZING!! If I didn’t know they were gluten free, I wouldn’t be able to tell by looking at them – they’re fluffy and crinkly and awesome! I’ll frost them this evening, but I know – this one’s a keeper! Thanks for sharing the recipe. 🙂

  11. I tried the recipe the first time and it was over done hard as a rock. I tried it the second time and it was delicious. I enjoyed making it, great recipe. I added extra grated ginger to give it a more zin 🙂
